You know how you get to the end of the chip bag and you have all those bits of chips that are too tiny to dip in anything, but too yummy to throw away or you’ll totally feel like a waster? Well, this recipe gives those little chiplets new purpose. They are the main event in this recipe, so think before you toss them next time. Give them a chance to be awesome. They might be small, but man do they make this recipe tasty.
2 cups crumbled tortilla chips
1 lb ground beef, browned and drained
1 can {15 ounces} corn or 2 cups frozen
1 can {15 ounces} black beans, drained and rinsed
1 cup chopped sweet peppers
3/4 cup salsa
1/2 cup black olives, pitted and chopped
1 cup cheddar or mozzarella cheese, shredded
Directions
Preheat oven to 350 F. Grease an 9×9 baking dish {I used butter} and add 3/4 cup crushed tortilla chips. Set aside.
In a large bowl, mix together the beef, corn, black beans, peppers, salsa, olives and 1/2 cup shredded cheese.
Pour half of the mixture over the tortilla chips. Add a second layer of chips and pour the remaining beef mixture over the chips. Top with remaining cheese and bake for 30 minutes. Serve warm and enjoy.

The mildest of salsa is too hot for me. What can I substitute for at least some or all of the salsa?

Try an equal amount of chopped stewed tomatoes with as much chili powder and cumin as suits your palate.

You could combine all ingredient except for the tortilla chips in one bag. Bag the chips separately. Then when you are ready to prepare, thaw in the fridge overnight and then cook according to the directions.

This is one of my husband’s favorite recipes! I make it using my homemade salsa, and of course, I always have crumbled tortilla chips on hand from the bags I use to eat my delicious salsa and from buying bags for my grandson. My 8 year old grandson loves Tostitos (which he calls toasty-toes) hahaha.

I made this tonight and it was delicious! I used lime chips and I didn’t have olives so I used a can of small green chili peppers to give it a little kick.
