One of the aspects of sending The Girl Who Thinks She’s a Bird off to college that I never thought about, was how fun care packages were going to be. I spend all sorts of time now coming up with fun ideas and recipes to stuff in packages for her so she won’t get homesick {okay mostly so I won’t breakdown}. When I saw this recipe I knew she’d love it {I mean each cookie has a whole Reese’s peanut butter cup inside!} and so I was pretty sure, if I baked a bunch, her roommates would help her gobble them up too. I might have snuck one or two before I sent them off and Holy Cats they were good!
Ingredients
2 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon corn starch
1 tablespoon vanilla
3/4 cup unsalted butter, melted
1 cup brown sugar
1/2 cup white sugar
1 egg, plus 1 egg yolk, room temperature
1 1/2 cup chocolate chips {can use semi-sweet or milk}
12 Reese’s Peanut Butter Cups
Directions
Line a baking sheet with a silpat or parchment paper and set aside.
In a medium mixing bowl, combine 1st 4 dry ingredients and set aside. In a separate bowl or stand mixer, cream butter and sugars together until fluffy. Add vanilla and egg and egg yolk and beat until creamy.
Slowly add in the dry ingredients and mix just until combined. Mix in the chocolate chips. Use a 1/4 measuring cup to scoop out dough. Press dough out and wrap around a Reese’s peanut butter cup. Seal the edges tightly. Repeat 12 times or until you’ve run out of dough. 😉
Place cookies on prepared cookie sheet and refrigerate for 30 minutes.
While cookies are chilling, preheat oven to 325 degrees. Remove cookies from fridge and bake for 15 to 17 minutes, or until golden. Enjoy!
