Some of my days on Fair Isle were more windy than others.
On an especially wet and windy day {we’re talking 40+ mile an hour winds} I decided to stay inside and bake rather than go out walking around the island.
I had some leftover chicken in the fridge from the roast chicken dinner I had made the night before and decided to make myself a chicken pot pie casserole with a biscuit topping.
And it turned out fantastic.
The casserole was so good, I had it for breakfast {and lunch and dinner} the next day.
You just can’t beat comfort food on a cold winter’s day. Not only does it warm you up, but it feels like home… Even when you’re 2,500 nautical miles away.

Chicken Pot Pie Casserole With A Biscuit Topping
Ingredients
For The Biscuits
2 cups all purpose flour
1 tablespoon baking powder
½ teaspoon salt
6 tablespoons unsalted butter
1 cup + 1 tablespoon milk, divided
For The Filling
4 tablespoons unsalted butter
4 cloves of garlic, minced
1 cup chopped leek or onion
1 cup chopped carrots
2 cups chopped potatoes
⅓ cup all purpose flour
¾ teaspoon dried thyme
½ teaspoon salt
½ teaspoon ground pepper
¼ teaspoon dried oregano
2 cups low sodium chicken broth
½ cup milk
1 cup cooked chicken, cubed
1 cup frozen peas
Instructions
Biscuit Topping
Dust a small cookie sheet with flour and set aside.
In a large bowl stir together the flour, baking soda and salt. Cut in the butter until the mixture resembles coarse crumbs. Add 1 cup of milk and stir until a soft, sticky dough forms.
With floured hands, shaped 8 – 10 biscuits about an inch thick {the amount of biscuits will depend on the size of the baking dish you’ll be using}. This is a very sticky dough, so make sure you keep your hands floured as you shape each biscuit.
Place biscuits on the floured baking sheet and pop them in the refrigerator while you make the filling.
Chicken Pot Pie Casserole Filling
Butter a 2.5 quart baking dish and set aside.
Saute the butter, garlic, leek, carrots and potatoes together in a large skillet over medium heat for about 5-7 minutes until the vegetables have softened and released a bit of liquid.
Stir in the flour, salt, thyme, salt, pepper and oregano until the liquid is absorbed.
Slowly stir in the chicken broth and milk and simmer for 8 – 10 minutes or until the mixture has thickened.
Stir in the chicken and peas. Remove from heat.
Preheat the oven to 400F.
Pour filling into your prepared baking dish. Place chilled biscuits on top. Brush biscuits with the remaining tablespoon of milk.
Bake for 30 minutes or until the biscuits are lightly brown and firm.

This looks delicious. Totally agree that pot pie is the ultimate comfort food! Will have to try a biscuit topping next time. Plus, then its not weird to have pie with it for dessert!

We have been making this for a couple of years and it is a favorite! I use my home canned chicken breast. It’s been awhile so I need to put it on the menu!

This is one of my favorite dishes. I remember my mom making it in a square shallow corning dish with Bisquick biscuits often in the winter months. Always satisfying!

I will make this! I hate chicken pot pie because I am allergic to peas. But, I can make this with green beans and I will love it. I will like this better than a crust.

It must have been one of those days yesterday. Chilly in my neck of the woods, too, so I made some Creamy Cozy Chicken Pot Pie Soup. Very similar ingredients except with a few splashes of chardonnay, egg noodles, and white cheddar cheese. My favorite.

We tried this recipe, tasted great. But the quantities of some of the ingredients didn’t seem to change when we used the scale selection of 1x, 2x or 3x. Examples of items that didn’t change include the peas, carrots, chicken. So what we cooked seemed out of balance. Is this just a software issue or are all items not supposed to scale?

Wow, I just checked and it is definitely a software glitch as only the top item of the list {flour for the biscuits and butter for the filling} is the only thing that will 2x or 3x. Interesting. Thanks for pointing that out and I will send an email to the software peeps.
