A few simple ingredients and your rice just went from blah to awesome. And if you’re a fan of Chipotle or Cafe Rio, you’re going to want to go gather those ingredients and put this on your menu tonight. I love it when a recipe this easy turns out this good. You can pair it with pretty much any Mexican dish on the planet. It just gives the rice a little extra kick of flavor. I’m never going back to just plain rice now.
Ingredients
2 cups water
1 tablespoon butter
1 cup long-grain white rice
1 teaspoon lime zest
2 tablespoons fresh lime juice
1/2 cup chopped cilantro
Directions
Toss ingredients in a rice cooker and hit the white rice button. See I told you it was easy!
If you don’t have a rice cooker, you can bring the water to a boil, and then stir the butter and rice into the water. Cover, reduce heat to low, and simmer for 20 minutes or until the rice is tender. Then stir the lime zest, lime juice, and cilantro into the cooked rice just before serving.

I have a similar recipe but mine has you add the cilantro after the rice is cooked.

I wanted just a bit more flavor and added sweet onion (1/4 cup or so) and a tablespoon of sweet chili sauce. Yummy!
