I bought a big fat jug of coconut oil awhile ago and I’ve been going crazy using it in recipes ever since. But this recipe, well it takes the cake for being so freakin easy the HH could make it. 3 simple ingredients and BAM, you have fluffy, warm biscuits. Did I mention they taste awesome? I wasn’t sure when I bit into my first one, so I downed about 3 more just to be certain. And it’s official. They’re amazing.
Ingredients
2 cups self-rising flour
1/4 cup coconut oil, softened not melted {here’s the kind I love!}
3/4 cup milk {can sub coconut milk if preferred}
Direction
Preheat oven to 425 F.
Using forks, cut the coconut oil into the flour until the mixture is crumbly. Add the milk and stir until a soft dough forms {dough should no longer stick to sides}. Knead the mixture just until combined {do not over-knead}.
Carefully roll the dough out on a floured surface until it’s about 1/2 an inch thick. Use a biscuit cutter to cut out the biscuits, and transfer to a baking sheet.
Bake for 10 minutes or until golden brown on top. Serve with butter, jam or just gobble straight from the pan.

My daughter is allergic to cows milk.
I LOVE the coconut oil too! I use it for many things, including my dogs and cats. They love it! And my homemade soaps also.
I’m going to definately make these.
