I’m making up Mango Salsa since they’re on sale. I use the recipe below for a fresh salsa. But, now because of the sale, I’ll make a big batch and store some. I heat up left overs and add a 1/2 t. lime juice to sterile jelly jars. Pour hot salsa into jars and put on caps. Store in refrig as soon as the jars cool enough to handle. I find it lasts at least a month in frig. I can make a quick ‘fast food meal’ by grilling some salmon, cooking up some rice, and serving this pre-made salsa.
I found this recipe in an Albertson’s grocery ad around 2000.
They credited Parent’s Magazine for the recipe.
1 hot house cucumber, peeled and chopped
¼ teaspoon kosher salt
2 mangoes, peeled, seeded, and cut into cubes
⅛ teaspoon red pepper flakes
2 or 3 roma tomatoes, cut into small cubes
3 Tablespoons fresh chopped cilantro
2 or 3 green onions , chopped
2 Tablespoons fresh lime juice
Toss all ingredients in a bowl. Refrigerate until serving time.
Notes:
I like to do this ahead of time in the morning. It lets the flavors meld together, and frees my time so I can enjoy grilling the salmon at the last minute.

My menu this week:
Split Pea Soup (use Ball Blue Book in crock pot and use less water)
Salad with mango, radish, avocado, stuffed celery, and dinner roll
Grilled Chicken, spiced roasted squash cubes, cooked greens or coleslaw, rice
Hamburgers or Sloppy Joes, Potato Salad, Red Pepper slices w/ dip
Home-canned turkey, mash potatoes, gravy, cranberry sauce, peas
Frozen tamale topped with chili, onions, cheese and served with carrot sticks and orange wedges
Meatloaf pie (shepherd pie) or burritos
Smoothie Night w/ pretzels
