This past week I made a homemade chili, refried beans, pasta sauce and blueberry bars using ingredients from our pantry as well as a few items at the store. To be totally honest, I stink at meal planning, so for me, it’s really important to have a bunch of tried and true recipes on hand to choose from that I know I can make in a jiffy when the mood strikes without having to use a bunch of exotic ingredients.
So here are a few recipes I may be making this week {I know granola it definitely on my “must make” list. 🙂
Breakfast Ideas
Peanut Butter Banana Granola – Both Monkey Boy and the HH like to have milk and cereal in the morning. Â I can’t stand all of the added sugar and crap, so instead, I usually whip up some homemade granola. Â {Pin it for Later}
Blueberry Banana Smoothie – When the bananas get too ripe to eat, and I am not in the mood to make banana bread, I like to peel them, wrap them in plastic wrap, and toss them in the freezer so that I can whip up smoothies anytime I want. Â {Pin it for Later}
Pumpkin Spice Waffles – If you didn’t use up the last of your pumpkin puree over the holidays, give these waffles a try. Â They are ridiculously simple, and odds are, you have everything on hand. Â {Pin it for Later}
Lunch Ideas and Dinner Ideas
Easy Taco Soup – The crock pot is where it’s at this time of year for me.  This recipe makes a ton, so you’ll have enough for lunch the next day.  {Pin it for Later}
Easy Crock Pot Stuffed Bell Peppers – These stuffed peppers are so satisfying, and best of all, you can really stuff them with just about any leftover meat you like {chicken, beef, etc.}{Pin it for Later}
Spaghetti Casserole – This casserole warms up beautifully for lunches all week long, so make it for dinner on Monday and eat it for lunch the rest the week. Â {Pin it for Later}

If you flash freeze those bananas on a cookie sheet or something first you won’t have to bother with the plastic every time. I let mine freeze then stick them in a freezer bag. I’ve been using the same bag for months! Just a little way to use less plastic, I’m always on the lookout for those!
