This week is going to be a little nuts around here so it’s nice to have a bunch of recipes to fall back on that I know are delicious. Now comes the hard part… choosing one.
Here are my suggestions for this week:

Strawberry Almond Granola – Granola is ridiculously easy to make. You can throw it on top of your yogurt in the morning, or pour a little milk over it. The best part is that it costs about 1/2 of the store-bought price and comes without all of the added garbage. {Pin it for Later}

Baked Potato Casserole – I am a huge fan of dumping everything into one pan and cooking it up. It seems simpler {probably because it is} and tastier somehow. {Pin it for Later}
Chicken and Kale Enchilada Casserole – This is another great way to hide Kale in your recipes. The rest of the flavors really come out and the kale goes down nice and easy. {Pin it for Later}
Cast Iron Skillet Chicken Pot Pie – The cast iron skillet part of this recipe makes the most delicious flaky crust you’ve ever put your lips on. {Pin it for Later}

How to Can Dilly Beans – Now is the time to plant beans in the garden, so that you have plenty to make a couple of jars of these. The best part is that with this recipe, you don’t need a pressure cooker. {Pin it for Later}
