Now that the kids are out of school and summer vacation is finally here all I can think about it is pulling out the simple recipes so I don’t spend too much time in the kitchen. There is so much to do in the garden and with family this time of year. Easy peasy is my middle name.
Here are this weeks menu plan selections:3 Breakfast Ideas
Strawberries & Cream Baked Oatmeal – Since I am loving Strawberry Malt-o-Meal from my 30-day supply pack right now, I think it only fitting that I provide a homemade version for you to make. {Pin it for Later}
Raisin Bran Muffins – These babies are packed with fiber. They are also pretty darn tasty. {Pin it for Later}
Ham and Cheese Broccoli Breakfast Casserole – This would be a fantastic menu item for Father’s day. {Pin it for Later}
4 Lunch Ideas and Dinner Ideas
Black Bean Fajitas – This is one of the those “meatless Monday” meals that everyone looks forward to. {Pin it for Later}
Southwest Chicken Chili – This is a great way to use up left-over chicken. Plus, it’s a crock pot meal, so it’s perfect for those summer days when you don’t want to spend the day over a hot stove. {Pin it for Later}
Asian Chicken with Ginger – Every time I make this meal, I wonder why I don’t use more ginger in my cooking. It has such a unique and awesome flavor. {Pin it for Later}
Baked Zucchini Fries – Zucchini season is almost here–make sure to add these to your to-do list. {Pin it for Later}
Raspberry Sorbet – The raspberry canes should be starting to flower–which means soon enough you’ll be able to whip up some raspberry sorbet. {Pin it for Later}
Nutella No Bake Cookies – What is it about Nutella that makes the world a better place? {Pin it for Later}
Almond Lemon Poppy Seed Biscotti – You better believe I am making a batch of these the second my 30 day challenge is up. Then, I am going to lazily dunk them in my morning tea. {Pin it for Later}
Taco Casserole – Freezer meals are the bomb-diggety–especially if you can talk some friends into popping over and assembling them. {Pin it for Later}
Homemade Applesauce – I usually wait to can most of my applesauce in the fall, BUT, if I can get a great deal on apples, I’ll make up a batch or two to get us through. {Pin it for Later}
