After staying in bed and texting my meal requests {one piece of toast, WATER, chicken broth} to The Girl for the last two days, I’m ready to get back in the kitchen {okay, so I am taking the easy way out and doing a Crock-pot dinner tonight} and make some real food. I might not be able to gobble down too much of it yet, but it’s time to use up what’s in the fridge and in the garden.
Here are a few recipes for this week:
3 Breakfast Ideas
Blackberry Ricotta Scones – It’s almost blackberry season, so make sure to add these to your must-try list. {Pin it for Later}
Healthy Blueberry Whole Wheat Pancakes – Since fresh berries are hard to come by in the winter, make the most of them with these fluffy delicious pancakes–believe me, you can’t even taste how healthy they are. 😉 {Pin it for Later}
Easy Spinach Frittata – This simple frittata is packed with spinach and ridiculously quick to make. For the record, it tastes great cold, so feel free to shovel it in your mouth in left-over form as you are trying to get out of the door. {Pin it for Later}
4 Lunch Ideas and Dinner Ideas
Cowboy Caviar – This is always a huge hit with my family. I love that I can get them to shovel it in while we all sit together on the back patio {it’s like forced captivation, only they don’t know it’s happening}. {Pin it for Later}
Radish Coleslaw – Are you going to grow a fall crop of radishes? If so, make sure to tuck this recipe away somewhere. It’s a keeper. {Pin it for Later}
Easy Spicy Italian Wrap – I don’t know about you, but sometimes sandwiches get old. That’s when I start making wraps. They travel in the HH’s lunches just as well as sandwiches, but he thinks he’s getting a gourmet meal. {Pin it for Later}
Whole Wheat Flour Tortillas – In case you want to go all out and make wraps for lunches all week, you can crank it up a notch with these homemade tortillas. Fair warning: make a double batch–they go fast. {Pin it for Later}
Dehydrated Pineapple – This stuff is like a dessert all by itself. It is the perfect fix to an afternoon sweet tooth. {Pin it for Later}
S’mores – No fire pit? No problem, just make a batch of these suckers and the kids will forget all about traditional s’mores. {Pin it for Later}
Black Bottom Brownie Bites – The problem with these is that “bites” makes it seem like a great idea to shovel in 20–and you will, because they are amaze-balls. {Pin it for Later}
Egg and Cheese English Muffins – These are PERFECT for camping or a weekend at a beach house. You can make a big ol’ batch while you are at home, and then actually relax and enjoy your vacation when it’s time. {Pin it for Later}
Sun Dried Tomatoes – Are any of your tomatoes starting to turn red? Mine are hinting at it. It means it’s time to gear up for boatloads of ’em coming my way. Sun dried tomatoes are easily my favorite way to put tomatoes up. {Pin it for Later}

My mom used to saute swiss chard with butter, bacon, and sometimes a little bit of sliced walla walla sweets. Food flashbacks are a thing.

I just froze 32 pints of blueberries. Always throw a few in whole wheat pancake batter. They are delicious!

Mavis, do you have a problem with tough skins on tomatoes you have roasted? I roasted then froze a couple of batches of cherry tomatoes last year and when I thawed and used them this winter the skins were tough and chewy. Any way to do(other than pre-peeling them)?
