The forecast is calling for a mixed bag weather here in the Pacific Northwest. Heat, rain and clouds, we’ve got them all. Why can’t we have an entire week of cool temps and rain so I can just make soup and biscuits all week? Because it’s SUMMER, that’s why and those veggies we are all trying to grow still need to to ripen.

I have been afraid to go in the zucchini patch lately (because of the monsters!) but I will go tomorrow just to make zucchini enchilada boats! YUM!

Hey Mavis,
I guess all the years of passing off my zucchini on my kids has come back to haunt me. My youngest (age 30) has been leaving me presents of summer squash. I have my own growing! Jokes on her though, I made a double batch of the zucchini relish recipe and tomorrow I’ll try the chocolate zucchini cake recipe. The yellow squash all got chopped for the food dehydrator for soups come fall. I’ll give her back all that zucchini in another form. That’s what moms are for right? Zucchini boats? I’ll have to have them over for dinner. Have you eaten it steamed with pesto? Delish.
