The first time I ever heard corn and pudding in the same sentence, it seemed like an odd combination. I think creamy chocolate or butterscotch when I think pudding, so I just couldn’t wrap my brain around the combo.
And then I made this recipe and never looked back. The ingredient combo is AH-Mazing, but it’s also versatile. You could add a chopped onion or top it with some fresh chives. Maybe even throw in some bacon. I’ve experimented but I also love it exactly as listed below. If you make it and decide to add a little something, let us know in the comments below.

Description

Ingredients
- 1/4 cup sugar
- 3 tablespoons flour
- 2 teaspoons baking powder
- 2 teaspoons table salt
- 6 large eggs
- 2 cups heavy cream
- 1/2 cup melted butter
- 6 cups fresh corn kernels {can use frozen- increase bake time if so}
Instructions
- Preheat oven to 350F. Lightly grease a 9 x 13 baking side and set aside.
- In a small bowl, combine sugar, flour, baking powder, and salt.
- In a separate bowl, whisk eggs, cream and melted butter.
- Slowly add flour mixture to the egg mixture and stir until smooth; stir in corn.
- Pour into prepared baking dish and bake for about 45 minutes or until mixture is fully set.
- Enjoy!

Does this have to have sugar in it? The thought of sugar in a savoury dish is just gross!! That’s probably why I think corn bread is disgusting lol!

Cornbread doesn’t have to have sugar in it. I grew up eating it since both Mom and Dad were born and raised in cornbread country (aka southern Missouri). Neither one of them would ever have put sugar in it. Mom preferred white cornmeal, but I make it with either white or yellow and never with sugar. I wouldn’t put sugar in this recipe either if I were making it. Vegetables should be vegetables, not dessert, in my opinion.

A family favorite! I whisk everything together and put it in a hot oven to ensure the corn doesn’t sink. We use milk, less of it, and canned creamed corn.
