I made myself a simple plate of creamy avocado pasta for lunch the other day and I had to share the recipe. With all the deals on avocados lately, this yummy avocado pasta recipe is just another excuse to eat more avocados!
Ingredients
7 oz pasta {I used spaghetti noodles}
1 ripe avocado, pitted
1 garlic clove, peeled
2 tablespoons olive oil
1 tablespoon lemon juice
1/2 teaspoon kosher salt
pinch of freshly ground pepper
Directions
Bring 2 quarts of water to a boil and cook your pasta until al dente {about 6- 7 minutes}.
Place the avocado, garlic, lemon juice, olive oil, salt and pepper in a food processor or a blender and give it a few whirls until everything is nice and smooth.
Once the pasta is done cooking, drain it in to a colander and toss with the avocado sauce. Serve immediately.
Talk about an easy peasy lunch!

How odd. I love avocados. Like love love love them. But I can’t imagine this tasting right? But…cheap to try for sure with all the free pasta we have…and cheap avos.

This recipe, or one very similar to it, made the rounds on Pinterest about two years ago. All of us at work had it for dinner once a week for a very long time – it’s that good! Sadly, no one where I’m currently living would enjoy it very much, and no one in the rest of my family likes avocados as much as I do, so it will be a while before I have it again. It’s a delicious meal – the garlic/lemon contrasts nicely with the avocado. It isn’t bland at all. You can adjust the lemon/garlic as you like. I added plenty of freshly ground black pepper when I made it. So yummy!

My parents are visiting and I served this for dinner with grilled chicken and grilled grape tomatoes along with fusilli pasta. What a versatile sauce! We agreed it needed a healthy dose of pepper and maybe more lemon and garlic. Can’t wait to try this with some grilled salmon.

I use this exact same sauce for my salmon pita pockets
4 pitas
8 oz grilled salmon
baby spinach
avocado sauce
2 oz salmon in each pita, top with sauce and spinach. Great summer recipe.
