I was in the mood for a spinach salad the other day, but I wanted to drizzle a really good dressing on it. There are few store bought dressings I love, so I decided to take matters into my own hands and make some myself. It takes only 5 ingredients {all of which I had on hand} and just seconds to whip it up. I suspect if you try it, you’ll never go back to store bought.
This would also be delicious basted over some chicken, although I’ve never tried it. But it certainly is AWESOME over any salad!
Ingredients
1/4 heaping cup Djion mustard
1/4 cup honey {can reduce this if you like it less sweet}
1/4 cup apple cider vinegar
1 1/2 teaspoons salt
1/4 cup plus 2 tablespoons vegetable oil
Directions
In a small mixing bowl, whisk together first 4 ingredients. Slow add in oil, whisking until fully incorporated. Store in a sealed container in the fridge. Enjoy!

I never liked store bought dressings. They all have the same “bottled” taste to it, probably some artificial stabilizer to prolong shelf life. Homemade dressing tastes fresher and richer. I use a high quality balsamic vinegar, which may seem expensive up front but lasts quite a while (a little bit goes a long way). Once I started making my own dressing, I never went back to the bottled stuff.
