Dijon Potato Salad with Green Onions Recipe

Ingredients

1 1/2 pounds new potatoes {I used red and Yukon}
3 green onions, chopped
2 tablespoons olive oil
1 tablespoon white wine vinegar
1 tablespoon Dijon mustard
salt and pepper to taste


Instructions

  1. Boil potatoes in water until cooked, but slightly firm.
  2. Let potatoes cool down a bit and then slice the larger ones in half.
  3. In a large bowl, combine the olive oil, vinegar, Dijon, salt and pepper and whisk together.
  4. Add green onions, potatoes and toss.
  5. Serve as a potato salad in the summer time or with a nice, fat juicy sandwich in the winter.
