I picked up the book Pumpkins and Squashes at the library a few weeks ago and ever since then I have been drooling over all the recipes in there. Seriously, I want to make every single recipe in the book. Is that weird? Have you ever come across a recipe book and EVERYTHING looked easy to make and delicious too? Well, the book is a winner I tell you and I plan to keep renewing the book until I’ve tried everything.
Yesterday I took a break from everything that’s been going on around here and treated myself with a trip to Fred Meyer for the sole purpose of checking out their winter squash selection {which just happens to be on sale this week for $0.69 a pound}. Although the selection wasn’t huge, I did find a few winter squashes I had never tried before as well as a few favorites. This Gold Nugget Squash. Ain’t she a beauty?
And this Blue Kuri Squash. It’s supposed to be good microwaved or baked. But then again, isn’t all squash good baked?
I grabbed a Stripetti Squash {a cross between a delicata and a spaghetti squash} because THE Girl loves spaghetti squash. She can devour an entire squash in one sitting.
I also snagged a Kabocha Squash. It’s a Japanese squash with a yam like flavor. I’ve never tried it before but I’m thinking it might be a good substitute for yams in my sweet potato casserole recipe.
Squash and pumpkin season. It’s here baby!! So get out there and try a new one this year. And then come back and tell me all about it!

I bought a kabocha over the weekend and I roasted it. I don’t think it was as sweet as I was led to believe. It was good, but I prefer butternut or spaghetti squash. Also, from what I’ve read, kabocha has EDIBLE SKIN when cooked.

I’ve never met a winter squash I didn’t like. 🙂 I love that you can eat almost the whole thing. Pretty much all of the winter squash have edible seeds so we toast them with olive oil and a little salt for a snacky treat. Lately I’ve been roasting cubed winter squash and then tossing them into salads with dried cherries and feta. Yummy!
Gonna check out that cookbook! Sounds like a winner.

Winter squash? I’m so definitely in! Last week my favorite produce stand had a big pallet of butternut squash, random sizes, marked “$2 each, or $1 each if you buy 10 or more.” Well, you can guess how *that* turned out… (small eye roll from beloved husband as he helped carry it in). The great thing about winter squash is that, for at least several months, it just keeps getting sweeter (assuming it likes the spot where you’re storing it). So, Lisa, maybe you’d like the kabocha better if it aged for a couple months before you roasted it?? And I may just have to invest in one of those spiralizer gadgets, having seen that my very favorite grocery store (Wegmans, found largely in NE states, but starting to spread out a bit) is selling pre-spiralized butternut squash and beets and zucchini to toss with a bit of seasoned oil and then sauté for 5 minutes. Sounds great, but at $6.99 per pound for those pre-shredded packages, I’m thinking just buy a spiralizer!

You’re in for a treat with that Kabocha. I use them in both savory and sweet recipes.

I just discovered winter squash last year, and now I cannot get enough. I wish I had more success growing it (we inherited oh so many insect pests when we bought our house), but I’m grateful for what we do get. I wish our stores had it that cheap–the lowest I’ve seen is $0.99/lb for non-organic. Our farmer’s market is only open 4 hours a week, so I haven’t been able to try there.

Pumpkin is the only winter squash I’ve eaten, if it’s a winter squash. I take that back, I’ve eaten a spaghetti squash. I liked it, but hubby didn’t. We never had them growing up, so I’ve never bought them
