Sometimes… you just need to make cookies… And today was one of those days. After thumbing through Martha’s Cookie Book I decided shortbread cookies would be the best bet to feed my butter craving. Actually I take that back… What I really wanted was the Banana-Walnut Chocolate Chunk Cookies… But I had no bananas, or walnuts, or chocolate chips for that matter… and dressing up in my Pilgrim outfit and going door to door bartering some of my dried pasta stockpile for the needed ingredients just seemed like to much work for one batch of cookies. So in reality… I settled for shortbread. But I’m glad I did… Because they were delish… although I still want to make the other cookies when I can find the necessary ingredients on sale. 🙂
Start with 1/2 cup of dried cranberries (I’ve been ordering them in 4-Pound Boxes because The Girl eats them like a normal kid would eat candy). Chop them up in to bits…Then combine them with 3/4 cup powered sugar, 2 cups of flour, 1 tsp. salt, 2 sticks of butter and 1 tsp. of vanilla.
Press into a lined 8×8 pan and bake at 325 until slightly browned on top (about 30 minutes). Let cool and slice into bite size squares.
Just be careful not to cut them too small… Because if you’re like me you’ll tell yourself… C’mon… go ahead have another (3) … after all… these pieces are so tiny 🙂
