This recipe for Earl Grey Biscotti was on the inside of my Numi Tea box this morning and immediately knew I needed to make it. True, I did have to sacrifice 3 tea bags to make it, but you know what? It was totally worth it. I don’t know about you, but I LOVE having something to dunk in my morning cuppa.
Ingredients
1 3/4 cups all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
1/3 cup unsalted butter, softened
2 eggs
1/4 cup boiling water
3 tea bags, Earl grey blend
1/3 cup slivered almonds
Directions
Preheat oven to 350. Tear open tea bag, pour into a small bowl, stir in boiling water and set aside.
Combine flour, baking soda and salt in a small bowl and set aside.
In a large mixing bowl beat the sugar and butter until creamy. Beat in eggs, then mix in tea water. Slowly add flour mixture, than nuts.
Shape dough into a log {mine was about 6″x12″} and bake on a lined cookie sheet {I always bake mine on silpats}. Bake for 20 minutes. Cool for 5 minutes, then cut logs diagonally into 1 inch thick slices. Return to oven and bake an additional 20 minutes until golden.
Cool on a wire rack.
Brew a pot of tea {or coffee} and dunk away.

Clarification please: when you mix in the tea water, do you mix the spices from the tea too? Or is just the water part of the tea mix?

Hi Kayla, cut open tea bags and place them in a small dish. Add 1/4 cup boiling water and let them steep, then add to cookie mix.

I was wondering the same. After steeping the water in the tea leaves, I assuming the steeped water AND tea leaves go into the mix. Yes?

Have you tried Earl Grey Lavender tea? It kind of mellows out the bergamot, and smells so amazing! There’s a little tea shop over in Port Gamble, WA that carries it.

I’m not sure I could give up tea entirely either. Although I’m more of an herbal tea person and I don’t usually add milk or sugar.
Actually i tend to drink way more ied tea than hot. although, there is nothing quite like a nice warm mug of tea in your hand when it’s cold outside.
