Costco canned chicken breast. You have tried it? I’ve been using a can a week for a long as I can remember. I like the Costco canned chicken breast because it’s shelf stable {the cans I just bought don’t expire for 3 years} and because it’s easy to use in homemade chicken chili, casseroles, in my favorite chicken salad recipe and our favorite chicken enchiladas.
These days, a 12.5 ounce can runs about $1.66 {$9.99 for a 6 pack}. All I have to do is open a can, drain the liquid and I’m ready to whip up a recipe. I don’t have to worry about cooking fresh chicken, or making room for it in my freezer and so for me, keeping canned chicken stocked in our pantry is a great time saver.
I’ve been making these easy chicken enchiladas with Costco canned chicken breast for years and thought it was high time I shared the recipe with you.
These chicken enchiladas are easy to make, delicious and they make great leftovers for lunch the next day as well. I like to serve them with a side of homemade refried beans and rice.

PrintEasy Chicken Enchiladas Using Costco Canned Chicken Breast
Ingredients
12.5 oz can Costco chicken breast, drained
1 cup pepper jack cheese
1 cup cheddar cheese
4 oz diced green chilies
19 oz enchilada sauce
10 corn tortillas
green onions, sliced for a garnish {optional}
Instructions
Preheat oven to 350F.
Spread 1/2 cup of enchilada sauce into the bottom of a 13″ x 9″ casserole dish.
In a mixing bowl, combine the chicken, diced green chilis, 3/4 cup pepper jack cheese, 3/4 cup cheddar cheese and 1/2 cup enchilada sauce.
Evenly fill the tortillas with the chicken mixture, roll and place seam-side down in the baking dish. Cover with remaining sauce and cheese. Bake 15 to 20 minutes or until the cheese is melted and bubbly.
Sprinkle with the green onions and serve warm.

Do you fry the tortillas in a little oil first or just use the tortillas as is from the package?

I notice that the photos and narrative show a 12.5 oz can of chicken but the written recipe shows using a 7 oz can. Did I miss something?

The net weight is 12.5 ounces and the drained weight is 7 ounces.

I get why people make these videos but why would anyone want to watch it. but it’s frustrating because if you google how to, these are the videos that come up.

Yes you can freeze this recipe. When I make them I freeze them first, then cook them when we’re ready to eat.
