One Hundred Dollars a Month reader Lisa sent me the recipe for her favorite Vegetarian Chili and I thought I would give it a try. I don’t know about you, but our family LOVES chili. Plus I would pretty much marry my crock pot if I could, because it’s practically one the greatest time savers out there.

Ingredients
2 cans kidney beans {undrained}
1 can northern white beans {undrained}
1 can northern white beans {undrained}
1 can black beans {undrained}
1 can corn {undrained}
1 can tomatoes {undrained}
1 diced green bell pepper {or whatever color you have on hand}
1 diced onion
1 packet of chili seasoning { I used 2 tbs. homemade taco mix}
a bit of vinegar {I used 1 teaspoon}
Directions
Toss it all in the crock pot and cook on low for 6 hours. Serve with corn bread and banjo music.

Just to put it out there — I sometimes throw rinsed organic dried beans (that I have not presoaked) into my crockpot recipes on high for 8 hours and they always turn out perfect. So for 2 more hours’ cooking time (during which I’m at work anyway), I can avoid those yucky BPAs found in the lining of canned goods and serve my family truly “from-scratch” meals. I do presoak beans when I have time, but when I forget, I just throw the dried ones in!

I was just wondering if I could use dried bean instead of canned. So you answered my question! But do you add additional liquid?

As a vegetarian of 9 years standing, I want to thank you for including vegetarian recipes. Keep ’em coming! In addition to being earth-friendly, delicious and healthy, eating meat-free is very frugal and I encourage meat eaters to add some vegetarian recipes to their repertoire.

I have to agree with the above poster. My daughter is 15yrs old and has made the decision to go vegetarian. At first, I was a little taken back because we have always been a meat grilling, eating, loving, family… and now I have to re-arrange how I cook , how to prepare meals so she is getting enough protein and nutrients… it was a little bumpy at first.. I felt she was surviving on pasta and veggies. I was unhappy, so I have begun to venture how and seek recipes that will provide her a great deal of protien, few carbs, and a good balanced dinner.
