Looking for an easy peasy side dish recipe to serve alongside your holiday ham this Easter, or perhaps for a roast down the road? Well this recipe for Parmesan peas is not only quick, but easy on the budget as well. Plus, I LOVE the fact that it calls for frozen peas… which is something we always seem to have on hand.
The HH whipped this recipe up last fall and from start to finish, it only took him about 10 minutes to prepare. Never in a million years would I have thought adding a little Parmesan cheese and lemon juice to peas would make them exciting, I mean because…. you know, peas. How exciting can they get, right? But these peas were wonderful! And so happy looking sitting on my plate, until I gobbled them all up that is. 😉

Ingredients
2 tablespoons unsalted butter
1/4 cup onion, diced
12 ounces frozen peas, thawed
1/2 teaspoon kosher salt
2 tablespoons freshly squeezed lemon juice
1/4 cup Parmesan cheese, grated
Freshly ground black pepper to taste
Instructions
Melt the butter in a medium pan over medium heat. Add the diced onion and cook until soft and translucent, about 4 minutes.
Stir in the peas and salt and cook until the peas are soft but still bright green, about 2 to 3 minutes. Add the lemon juice, stir and remove from heat. Stir in the Parmesan and freshly ground black pepper. Serve warm.

I recently discovered a great side dish just by playing around! Heat up frozen peas for about 30 seconds in the microwave, toss in some diced cucumber ( and zucchini too if you like). Sprinkle with a little salt and pepper and Italian herbs. Add blue cheese dressing, mix thoroughly and throw a little blue cheese on the top. Delicious and SO easy!
