Ingredients
2 cups cooked quinoa {I cook quinoa in my rice cooker – 1 cup quinoa & 1 1/4 cup chicken broth}
3 eggs
1 cup zucchini, shredded
3/4 – 1 cup shredded cheddar cheese
1 cup diced ham
1 tablespoon dried parsley
3 tablespoons Parmesan cheese
1/2 small onion, diced {about 1/4 cup}
1/2 teaspoon salt
1/4 teaspoon pepper
Olive oil for the pans
Instructions
Preheat the oven to 350 degrees.
Place all the ingredients in a large bowl and mix to combine. Generously spray 2 mini muffin tins with olive oil and scoop 1 tablespoon into each cup.
I like to use a 1 tablespoon cookie scoop for this step. Bake quinoa bites for 18 minutes, or until the edges of the quinoa bites are a nice golden brown.
Cool for a few minutes, then remove from the pan and eat!
