Ingredients

1 large bunch of kale, rinsed,center stem removed, and chopped
3 tablespoons of unsalted butter
3 tablespoons of all-purpose flour
2 tablespoons cream cheese
1 tablespoon olive oil
1 clove garlic, minced
1/3 cup Parmesan cheese, grated
1/8 teaspoon ground nutmeg
1 cup milk {I used 2%}
½ cup heavy whipping cream
1 teaspoon unsalted butter to coat baking dish
Instructions
- Saute kale, olive oil, and garlic in a pan until wilted. Set aside.
- Melt butter in a medium saucepan, over medium-low heat.
- Once melted, slowly whisk in the flower until nice and smooth.
- Add nutmeg, milk and whipping cream and stir well. Reduce heat to a simmer until the sauce has thickened a bit {about 2 minutes}.
- Add cream cheese and Parmesan cheese and cook until the cheese has melted.
- Fold in sauteed kale, salt and pepper, and place the creamed kale mixture in a buttered dish {mine was 5×5 inches wide} and place on a cookie sheet.
- Broil on high until the cheese has slightly browned.
