Ingredients

1 acorn squash halved, seeded, and sliced 3/4 inch thick
2 tablespoons olive oil
2 teaspoons Garlic Pepper Seasoning {I used Mc Cormicks}
1/4 cup Parmesan cheese, grated
Instructions
- Preheat oven to 400 degrees.
- Place sliced acorn squash in a large bowl and toss with 2 tablespoons olive oil and 2 teaspoons of garlic pepper seasoning.
- Place on a lined cookie sheet {I use silpats*} and sprinkle Parmesan cheese over the top of the acorn squash.
- Roast at 400 degree for 30 minutes, or until the acorn squash is tender.
- Serve as a side dish { I served this with Ritz Cracker Chicken}
