Have you ever tried a raw beet salad before? Well I hadn’t until a few years ago and now it’s my go to recipe whenever I have extra fresh beets on hand. This recipe for raw beet salad is super easy to make and it keeps well in the fridge too.
Perfect for picnics or potlucks or hey, even if you just want to feel like one of those hippy dippy types who eat all healthy and stuff. 😉
Ahh yes. So this is what eating real food tastes like. It’s kinda cool if you ask me.

Description
Raw Beet Salad – Quick, easy and healthy and hey, it tastes great too. I love making this salad and it packs well for lunches too!
Ingredients
1 cup peeled, shredded beets
1 cup shredded carrots
1/4 cup sunflower seeds {optional}
1/4 cup raisins
the juice of 1 medium orange
Instructions
- Toss the beets, carrots, sunflower seeds and raisins together in a bowl and pour orange juice over the top.
- Divide salad between two plates and serve.

I love putting beets in a salad, but I have never had them this way. Just might have to give it a try! (Hopefully the 20 beet seedlings I just transplanted with give me something to work with).

QUESTION-DO YOU JUST WASH/SCRUB THE BEETS?
I’VE HAD COOKED BEETS IN SALADS AND THEY ARE VERY GOOD.

We peeled them. I would think if you scrubbed them good that would be fine also. They might be even better for you with the skins still on. More nutrients? 🙂
