So basically last week was pretty much all fancy toast and big salads. Which was a good thing because after discovering Standard Baking Company, all I want to do is go back and load up on pastries again.
I could do that, right? Eat totally healthy one week and eat pastries the next? Has anyone written that lifestyle/diet book yet? Hmmm… Now there’s an idea.

Trader Joe’s fettuccine alfredo. Seriously, the easiest and tasty on the planet earth when it comes to frozen ready to go pasta.

I love buying fruits and vegetables from Trader Joe’s! All the quality of Costco, but smaller portions {perfect for 2 people} and way less than Scammaford. What’s not to love?
And their avocados… I haven’t gotten a bad one yet.
Fruit smoothie.
Oatmeal with dried apricots and bananas. Holy cow, it was a good week. Lot’s of simple satisfying meals… No fluff. Just real food. How often does that happen? I feel like I should sign up for a marathon or something. 😉

My late MIL binge ate that way and landed in the hospital many times which could have been prevented. Now we realize she had an eating disorder.

The only thing I purchased this week was a head of lettuce and a cucumber, totalling $3.29. I do need to purchase honey this week, and more lettuce.
Spring is tricking me. The birds were singing yesterday, and you can smell the sunshine if you go outside right now. I am going to plan for an early spring and start my seedlings for the garden next week. This week is too busy, I have a dentist and therapy appt, my brother has surgery for prostate cancer on friday. It will most likely be freezer meals or salads this week.
I ordered 2 flats of strawberries from our FFA students, they should be coming in next week. 8 quarts of strawberries per flat. $30 each. I do not like freezing them whole, so I blitz them up in mom’s vitamix and freeze, some with mint, some with lemon juice and sweetener, some plain… Any ideas?

Our FFA strawberries (Indiana) come from Florida. The delivery date was delayed by a couple of weeks because with some heavy rain down south they couldn’t guarantee a good harvest.

Love some fancy toast. My current favorite is sauteed mushroom . 🙂 Eating oats and a big salad each day makes me feel good. In the winter, I will roast a sheet pan full of winter veg and top off my salad throughout the week. Broccoli, cauliflower and sweet potato are my current favorites. I don’t feel deprived and I think it just has the unintended effect of crowding out space I might fill with junky stuff. Seems like I am making a big pot of bean soup one a week lately for lunches. This week was minestrone, but next week will probably be vegetarian pozole. Your smoothies look delicious! Yum!

I did a whole lot better this past week eating healthier and eating more veggies. I did 2 fast days where i only ate one meal per day. I Fasted desserts all week. I didn’t crave any sweets til i ate a piece of chocolate. I find that if I can stay away from sweets, the less cravings I have for it. Sweet tea is my downfall though. I am going to try to only drink sweet tea once a day and the rest water.

My thing lately has been to take a can of chili split it into four mugs and then eat it slowly over the week. Works really well in winter to make me feel like I’m having something warm an indulgent.
