Can someone please explain to me my the simplest meals are always the ones that taste the best? Seriously, a few homegrown potatoes, an onion, fresh eggs from the chickens out back and a few sausages. Does it get any better than that? I think not.
Ingredients
6 breakfast sausages, chopped
1/4 cup chopped onion
6 small potatoes, chopped
6 eggs, beaten
1/4 cup shredded cheese {I used a cheddar/mozzarella mix}
1 tablespoon canola oil
1/2 teaspoon kosher salt
1/4 teaspoon pepper
fresh chives
Directions
In a large skillet, combine the breakfast sausage, potatoes, onion and oil and saute over medium heat until everything is cooked though and slightly browned. Pour beaten eggs into the skillet, stir and cook. Once the the eggs have set and are firm season with salt and pepper, add cheese and garnish with fresh chives.
