I used to be afraid of flourless cookies. Any cookie recipe without flour would kind of make me cringe.
A cookie needed flour, or at least that’s what I used to think. Not anymore. These cookies changed my mind. If you too run from anything gluten free or flourless, give these a try. They are the perfect balance of peanut butter and chocolate.
Plus, I love a cookie with with so few ingredients!
You do have to remember that they aren’t light and fluffy like typical cookies. They are a bit heavy, but nothing a little milk can’t fix!

PrintFlourless Peanut Butter Chocolate Chip Cookies
Ingredients
1 cup creamy peanut butter
3/4 cup packed brown sugar
1/2 teaspoon baking soda
Pinch of salt
1 large egg
1 teaspoon vanilla extract
1/2 cup chocolate chips
Instructions
Preheat oven to 350 F. Line a baking sheet with parchment paper or a silpat and set aside. In a stand mixer, beat peanut butter, sugar, baking soda, and salt until combined. Add the egg and vanilla, and mix until fully incorporated. Stir in the chocolate chips.
Drop tablespoon-sized balls of dough onto prepared baking sheet and press down the top of the dough to flatten just slightly. Bake the cookies for 8 to 10 minutes or until slightly crinkled.
Do not let the edges brown.

These sound AH-MA-ZING! I’m going to have to try these soon since my family hasn’t ever met a peanut butter chocolate chip cookie we haven’t liked! Thank you for sharing the recipe!

Did you use regular processed peanut butter, the kind with palm oil or or some other (non-peanut) oil mixed in? I have a similar recipe that I love but once I tried it with natural peanut butter (peanuts, salt only) and it didn’t work at all, it was a horrible mess.

Aren’t all peanut butter cookies supposed to be a little heavy?? 🙂 Dad is the PB cookie fan in the family ( we all eat them) so I will have to run them by him as a taste tester..supposed to be snowy here overnight/tomorrow ( 4-6″ Our biggest of the season so far ..which in this part of PA we can have had multiple foot deep storms by now. It was 61 degrees yesterday and is in the 50s now) Might be a good day to make cookies..
