We all loved the Teriyaki Chicken freezer meal I made awhile back, so I decided to switch things up a bit and make it even better by adding in some pineapple and few other ingredients. It was a hit. And of course because it’s a freezer meal AND a crock pot meal, it’s so easy Lucy could do it {actually Lucy would probably chew through the crock pot cord and start a fire and burn my whole house down}.
Freezer Meals – Pineapple Teriyaki Chicken
Ingredients
4 chicken breasts
1 cup teriyaki sauce
1 cup water
2/3 cup brown sugar
1 pounds of carrots, peeled and chopped
1 can pineapple tidbits or chunks
2 bell peppers, seeded and sliced
3 garlic cloves, minced
4 ounces canned water chestnuts, drained {optional}
Instructions
Load all the ingredients into a gallon sized Ziploc bag, lay it flat, label and freeze for the Crock Pot method. Or, lay the chicken in a foil pan, load all in remaining ingredients on top, cover and freeze for the oven method.
Crock Pot Cooking Method: Cook from frozen on low for 6 hours or until chicken is thoroughly cooked, or thaw overnight in the refrigerator overnight and cook on low for 4 hours or until chicken is thoroughly cooked.
Oven Cooking Method: Thaw overnight in the refrigerator. Cook at 350 degrees for 50-60 minutes or until chicken is cooked thoroughly.
This is WONDERFUL served over rice.

Every time I freeze fresh veggies like carrots they turn into a horrid mush when defrosted. I had to turn to previously frozen veggies to construct my freezer meals.
Do you use frozen or fresh veggies to freeze and how to you keep them from going to mush?

I used fresh carrots for this recipe and I have not had a problem with my veggies going to mush. Sorry I can’t be more helpful.

If you par broil them for 4 mins first they won’t become mussy when frozen.
Put vegetables in a pot of water bring them to boil, then boil for no more than 4 mins. Turn off immediately and pour the vegetables in a strainer and rince with cold water till cool. Then put into pastic bags and freeze. Some vegetables don’t work as well as others but carrots, broccoli, cauliflower etc will work perfectly if you don’t overcook them.

My home-frozen green beans and carrots don’t turn to mush – they turn to rubber. They are terrible! Any suggestions? Actually, we don’t even care for the packaged ones. They are nearly as bad.

Made this tonight. I made homemade teriyaki sauce with Braggs amino acid, found a simple recipe at all recipes.com
I used a can of water chestnuts, a big can of pineapple chunks, some green peppers I had cut up in freezer and 3/4 of a bag of baby carrots. I am trying to eat what we have right now,instead of shopping. I think I made a mistake by putting all the liquid from the pineapple in the crockpot, I think I should have drained some of the juice off because it diluted the teriyaki flavor. The chicken was very moist out of he crockpot, I put it out on a platter over all the veges. By the end of dinner the chicken really dried out. I think I should have put a bunch of the juice over the chicken to keep it from drying out while we were eating. I think I would attempt this again if I could keep the chicken moist. 🙂

I’ve also stopped trying to make freezer meals because my veggies turned to mush. I will only put fresh in the slow cooker from now on. I had such high hopes for freezer meals, but I have largely abandoned that, except for shredded meats like beef, pork, and chicken which I’ve cooked. I vacuum pack those, and they bounce back nicely. I never did like or buy many frozen veggies other than peas and corn and broccoli for my hubs. I don’t eat broccoli, so I can’t compare it to fresh, but things like carrots, onions, cauliflower, potatoes or peppers are just not pleasant to me whether I freeze them or buy them frozen.

I used the oven method and my family said this was delicious. The only change i will make for next time is to cook the carrots separately. They kind of overpowered the flavors of the other ingredients.
