2 cup fresh corn kernels
1 cup flour
4 teaspoons baking powder
1 tablespoon sugar
3/4 cup milk {I used 2%}
2 eggs
butter for the griddle
Instructions
- Place 1 cup corn kernels, the milk, eggs, salt and flour in a blender and give it a whirl until the batter is smooth.
- Fold in remaining 1 cup of corn kernels.
- Butter your grill, pan or griddle.
- Pour 1/2 cup servings of batter on to the grill and cook like you would pancakes.
- Serve with maple syrup or sour cream.
Notes
You can use a regular pan to cook these pancakes up or a pancake griddle/grill. I cook mine on a griddle because I am a freak and like to see 6 little pancakes all lined up n a pretty row. But if you are the 1 pancake per pan kind of person, that’s totally okay too.
