Last night we harvested over a gallon of fresh shelling peas from the garden. So this morning I went ahead and made a fresh pea salad with bacon and chives for tonight’s dinner. I LOVE this recipe!!
Not only do I enjoy the daily bounty my garden provides during the summer months, but having a constant supply of fresh ingredients to work with makes dinner time a snap. Seriously, dinner doesn’t have to be complicated!

Note: This salad lasts about 5 days in the fridge so it’s a perfect recipe to make if you are meal planning if you ask me!
PrintPea Salad with Bacon and Chives
Ingredients
3 cup fresh peas, shelled
5 strips bacon, cooked, chopped
1/3 cup cheddar cheese, cubed
2 tablespoons fresh chives, chopped
4 tablespoons mayonnaise
2 tablespoon sour cream
1 tablespoon fresh mint, chopped
salt and pepper to taste.
Instructions
After shelling your peas, blanch them in boiling water for 2 minutes. Place peas in ice cold water to cool. Rinse. Combine remaining ingredients in a large bowl and mix together. Refrigerate 2 hours before serving.

I love fresh peas but I hate shelling them- it takes a LONG time to get 3 cups of peas- I keep thinking that I’ll grow them again ( there are only so many ways to fix snow peas!)- but I just don’t know if I’m up to all that shelling!

Ha! Luckily I have teenagers to shell my peas. 🙂

I made some changes and it turned out good. I left out the mint, with 4 cups of peas instead of 3, and used turkey bacon.

This sounds like a fab way to use up all the peas in my freezer! Next year I hope to not buy ANY peas and have a ton from my garden.
