I have made thousands of cookies through the years. I love to make them and I love to eat them. But sometimes I like to switch things up and so yesterday, I made a big pan of cookie bars for my sweet treat of the week.
If you still have kiddos at home, these cookie bars would be great to pack in lunches as well. They’s also be perfect to enjoy with your afternoon cuppa, or to stash away in the freezer in an old lasagna box {so nobody knows they’re there!} 😉
This recipe, it’s a keeper.

Ingredients
1 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 eggs
2 teaspoons vanilla extract
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cups flour
1/2 cup seedless raisins
1/2 cup chopped walnuts
2 cups rolled oats
2 cups chocolate chips {divided}
Directions
Preheat oven to 350F. Lightly grease a 9×13 pan {or use parchment paper} and set aside. {I prefer parchment paper because the bars are easier to lift out of the pan and cut}.
Combine softened butter and sugars. Add the eggs one at a time, beating before adding the next one, and then the vanilla. Add remaining ingredients and 1 cup of chocolate chips {reserving one cup of chocolate chips}, and stir until incorporated.
Press half the batter into prepared pan, and then spread the remaining chocolate chips on top. Press the remaining dough on top, smoothing the top as best you can. Bake for 30 minutes, or until the top is golden brown. Be prepared for the middle to look a little gooey. It will firm up as the bars cool. Let cool completely before cutting. Enjoy!

In the ingredients you say softened butter but in the instructions you say melted butter I wants to make these, but want to get them right. Thanks for clarifying
