My parents got me a gift card to Panera for Christmas so I thought I’d go all out and splurge on some fancy bread. And since I had fancy bread, of course I had to use fancy cheese. And since I had fancy bread and fancy cheese, of course I had to make a fancy grilled cheese sandwich.
No offense to Panera, but this sandwich just might rival their very best sandwich. The cheeses all melty over the spinach with pesto-y crunchy bread are flipping’ awesome. I’m feeling like a sandwich artist now. Pretty sure you will too if you make this.
2 slices of your favorite high quality bread
2 tablespoons Walnut Basil Pesto
2 slices mozzarella cheese
2 slices turkey
1/2 cup baby spinach
1/4 avocado, sliced
2 tablespoons feta cheese, crumbled
1 tablespoon butter {or olive oil}
Directions
Spread about 1 tablespoon of pesto on each slice of bread. On the pesto side of one of the slices of bread, stack 1 slice of cheese, turkey, some sliced avocado, the crumbled feta cheese, spinach, and then the second slice of cheese. Top it with second slice of bread, pesto side down. Press together gently.
Heat the butter {or olive oil} in a pan over medium heat. Place the sandwich carefully in the pan and cook until bread is golden brown. Flip and cook until second side is golden brown. Enjoy!
