Last summer when the HH bought his cast iron griddle we bought a few bags of frozen hash browns so he could fulfill his dream of playing line cook all summer. And well, yesterday while I was rummaging around the freezer, I noticed we still had a half a bag of hash browns left in there.
So we had breakfast for dinner last night. Because seriously, who says you can only have bacon, eggs and hash browns in the morning? 😉 This was his first time making hash browns in a waffle maker, and they turned out so good, I’m already looking forward to having them again.
The HH made our hash brown waffles with bacon and cheese, but I think the add-in possibilities could be endless {chopped red peppers, onions, maybe a little ham instead of bacon?}
The clean up was easy too. Cooking hash browns in a waffle maker is much easier than in a pan with grease and oil shooting everywhere or sticking to the pan, that’s for sure.
Quick and easy… this is my kind of recipe.

PrintHash Brown Waffles with Bacon and Cheese
Ingredients
- 8 ounces frozen shredded hash browns, thawed
- 2 eggs, beaten
- 1/2 cup shredded cheddar cheese
- 1/2 cup cooked bacon bits
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- vegetable oil or butter to grease your waffle iron
Instructions
In a large bowl stir together the potatoes, eggs, cheese, bacon, salt and pepper until the potatoes are evenly coated.
Heat up waffle iron to medium high heat and brush with vegetable oil or butter. Spread 1 cup of the hash brown mixture evenly over the waffle iron close lid and cook until done {ours took about 4 minutes, but waffle makers can vary}.
This recipe makes 2 full size hash brown waffles.

I had great potato waffles at this Waffle Iron Museum festival in the Pfalz, Germany. The museum has over 600 waffle irons on display, the oldest dates from 1671.

I’ve never tried it with hash browns, but we made various Thanksgiving leftover waffles one year (mashed potato, stuffing, sweet potato, etc.). The hash browns seem faster though.
