Ingredients
1 pound lean ground beef
3/4 cup diced onion
3/4 cup diced celery
1 teaspoon dried basil
1 teaspoon dried parsley flakes
4 tablespoons unsalted butter, divided
3 cups chicken broth
4 cups peeled and diced potatoes
1/4 cup all purpose flour
1 1/2 cups milk {we used 2%}
2 cups shredded cheddar cheese
3/4 teaspoon salt
1/2 teaspoon pepper
1/4 cup sour cream
Instructions
In a 4 quart pot, brown the ground beef over medium heat. Drain and set aside.
In the same pot add 1 T butter and add onion, parsley flakes, basil and celery. Sauté until tender.
Add the chicken broth, potatoes and ground beef and bring to a boil. Reduce heat, cover and simmer 10-12 minutes or until potatoes are tender.
In small saucepan melt remaining butter {3 T} and add the flour. Cook and stir for 2 -3 minutes over medium low heat until bubbly. Add to the soup mixture and bring to a boil. Cook and stir for 2 minutes. Reduce heat to low.
Stir in the shredded cheese, milk, salt and pepper. Cook and stir until cheese melts. Remove from heat and stir in the sour cream.

This was a family favorite of ours growing up, the only difference is it has about 8 oz of Velveeta in it instead of the cheddar cheese. I still make it for my kids today.

We made this tonight & it was sooo yummy! We din’t eat meat too much so I subbed 1/2 cup dried lentils & a can of great northern beans for the hamburger and we did’t have celery so I used shedded carrot & a bit if celery salt to get the gist of flavor profile. Mmmm…it really was so yummy! Thank you fir sharing this recipe!

Best new recipe I’ve made in a while. My family loved this, the ultimate comfort food. I tinkered with it to match some other good recipes I know, but the proportions of veg, potatoes, beef, cheese and sour cream were spot on. The basil smelled very spicy during cooking and had me nervous but it was perfect!

Made this over the weekend. I used ground turkey and turkey stock, and threw in some finely diced green peppers but otherwise followed the recipe. Makes a BIG pot – everyone had seconds/thirds and we had enough for leftovers the next day. Served with biscuits the first time and fresh bread the second. This is going in the rotation for sure! One of those recipes that had folks wandering in to the kitchen, asking, “what smells so good?” 🙂

I have a similar recipe which includes garnishing with chopped dill pickle slices and bread croutons made from buns, so it’s really like a cheeseburger! Thanks for reminding me of it! I adore soup!
