In my opinion, muffins are the perfect breakfast food. Why? Because you can make them the night before and sleep in. Yay for sleeping in. Who doesn’t like to do that? {Weirdos that’s who!}
This recipe is about 10 million times better than those jumbo sized muffins you can get at the big box stores. You know the ones. Just one of their muffins can feed an entire village.
Here is the recipe. I hope you like it, we sure do.
PrintHomemade Poppy Seed Muffins
Ingredients
3 cups all-purpose flour
2–1/2 cups sugar
1/3 cup poppy seeds {I buy poppy seeds in bulk}
1–1/2 teaspoons baking powder
1–1/2 teaspoons salt
3 eggs
1–1/2 cups milk
1 cup canola oil
1–1/2 teaspoons vanilla extract
1–1/2 teaspoons almond extract
Instructions
Preheat oven 350 degrees.
Line muffin tins with muffin/cupcake liners.
Combine dry ingredients together in a large bowl. Stir in the wet ingredients, just until blended. Drop in to muffin cups {I like to use a 3 tablespoon cookie scoop} so the muffin cups are 2/3 full. Bake for 16 to 18 minutes or until the tops are lightly browned.

I love muffins! I love muffins more than cupcakes!
My son hates stuff in his muffins, you know, “stuff” like blueberries, raisins (in peanut butter muffins), poppy seeds, anything.
Muffins are perfect for him, as I can put some of the batter in the baking tin before adding in the “stuff.” Then everyone is happy!
Did I misread? I didn’t catch the topping ingredients. I just sprinkle mine with some sugar.
I’m going to Winco today, they probably have some poppy seeds in the bins. I need to make these muffins!

Wonderful recipe but I wouldn’t use the canola oil since it’s GMO.

It’s possible to buy canola oil not made with genetically modified rapeseed.
Myself, I believe GMO can be extremely beneficial, or harmful. In my agricultural valley, with some large organic farms that provide a national frozen food brand with products, no.
But, GMO may save millions of lives in developing countries. Not necessarily by modifying them to be immune to pests, but allowing crops to be grown in arid areas, or areas with poor soil. Crops will produce more, which is important with the Earth’s population continuing to grow. Some uses are unhealthy, but weighing the pros and cons, if they solve world hunger, they are worth another look.
I think some people read GMO and jump to conclusions. They all aren’t bad!
