Last week started off pretty normal, and then it got a little crazy and it felt like we were on the “go” from the moment we woke up until we went to bed each night. It was like, you know… how it used to be. And oh how I’ve missed that.
We did a LOT of snacking {pickety bits} but took the time to eat a few real meals too.
But mostly we snacked. 🙂
Costco Shopping Trip $179.07
The Girl came to visit! And brought us rations from afar. $47.35 for steak strips. Yup. It’s time to break out the grill.
Do you shop at Costco? Have you tried those coconut thinsters? The Girl thought I might like them and threw them in the cart and you know what? THEY ARE DELICIOUS! I can’t help to think that crushed, they would make a wonderful pie crust for a coconut cream pie. Hmmm…. maybe I’ll save the all the crushed bits from the bottom of the bags and try it out.
Also, since we already have a few bookings for Camp Butterfield for this summer, I had her pick up from extra towels. $9.99 for a nice and big plush beach towel, you just can’t beat that.
She also brought us some homemade bagels. 🙂 It’s funny, kids never seem to cook much when they live with you… but once they’re off on their own they seem make all sorts of things. And lucky for us, we get to test out the results every once in a while.
Fisher scones and bacon. The perfect breakfast combination. Mrs. HB if you are reading this that was my last bag of sconce mix. Please pack some more when you come to visit me in a few weeks.

Coconut Thinsters are amazing. So are the lemon and chocolate chip but the coconut are the best. We don’t have a Costco so I buy them at Sam’s when they have them.

Aldi’s sells a version of the coconut thins and chocolate chip thins. I was in my local Aldi’s on Sunday and they had LEMON thins and Key Lime thins…..omg, so good! And yes Mavis, they do grind up to make an amazing pie crust for a coconut cream or Key Lime pie.

I get a very similar coconut cookie at Aldi. They also have chocolate chip, but as you said, coconut is the best! Love those cookies!

I’ve seen the archery set mentioned, but now I’m curious since you used the word “booking”… what is Camp Butterfield? I thought you were just referring to your house, but are you running an airbnb or something? Very curious to know!
It was just announced last month that my town is finally getting a Costco. I’ve never been to one, we only have Sams. I want to do a visit once it’s open. I have 4 kids in my house and my grocery budget is having to stretch further and further lol

I always like seeing your “pickety bits” platters and plates. I wish my husband would go for something like this, but he is a sit-down dinner (hot cooked meal) kind of guy, even in the summer.

I don’t know if your husband would go for this, but we sometimes do a sort of “hot pickety bits.” A warm dip (crab, BLT, spinach artichoke, buffalo chicken, etc.), French bread toasts or warm flat bread, and bruschetta (just the tomato part, so it can also go on the toast). Tzatziki is another good addition. It’s not quite as easy as straight pickety bits, but it can be made in advance, and the bruschetta keeps it from being too heavy. Warm dips freeze well and reheat quickly once thawed too.

Those coconut crisps are awesome for making s’mores. I used that as the outside cracker, toasted marshmallow, an a reeses peanut butter easter egg as the chocolate and it was the most amazing s’more I’ve ever had

Old Fashioned Cream Scones
Makes 12 scones
Our family eats them as a breakfast treat, half of the batter dedicated to dried currants and the other half to chocolate chips, so both parents and children are happy. Lately, I’ve replaced currants with chopped, candied orange peel and served them split with sugared, sliced strawberries and whipped cream as a delicious rendition of Strawberry Shortcake.

2 cups flour
3 teaspoons baking powder
1/4 cup sugar
1/2 teaspoon salt
1/2 cup butter, chilled
2 eggs, beaten
1/3 cup heavy cream [78g]
1/2 cup currants*
*Frozen fruit, dried fruit, candied citrus peel, chocolate chips . . .
Preheat oven to 400 degrees.
In a bowl, combine the flour, baking powder, sugar, and salt. With a pastry blender (or cuisinart), cut in the butter until the mixture resembles fine crumbs. Str in the eggs and cream to make a stiff dough. It’s OK if it’s a little crumbly. (If a food processor is used, take care not to overprocess.)
Turn out dough on to lightly floured board. Dust the dough with flour, make a well in the center and add the currants. Knead lightly until the currants (or whatever) are well distributed and the dough holds together. Do not overhandle.
Divide the dough into two parts. (If using two different fillings, divide dough first and knead individually, adding the goodies then.) Roll or pat each part out to make a circle six inches in diameter and about one inch thick. Using a sharp knife, cut each circle into six sections, making even wedges. Arrange on a baking sheet about 1/2″ inch apart.
Brush scones with cream and sprinkle with sugar. Bake for 15 – 20 minutes or until golden brown. Cool about 10 minutes. They are best served warm.

Since we all stay at home, I also spend more on food than I usually did before. But how many new recipes I have tried and how many new foods I have discovered.
It all looks very appetizing. I definitely want so many snacks. Yum.
