One of the things I love about Maine, is summer. I love it almost as much as I love winter here. But for a totally different reason. In winter, it’s all about slowing down, staying inside, putting on pajamas by 2 and working on art projects, watching a movie or reading and going to bed early.
But during the summer, when the sky is lit up before 5am it’s go go go. Get while the getting is good and taking advantage of all the places that are open {food establishments, shops, museums} and getting all those garden and outdoor home projects done before the weather changes again.
I love it. I love the ebb and flow of it all.
And I especially love getting ice cream from the ice cream stands. 🙂 Last week I had 2 toasted coconut cones. And they were fantastic. I also realized that it’s worth it to pay $1.00 more to get a waffle cone. Because ice cream in a cake cone just isn’t the same.
Chicken salad with cranberries, chopped apples and relish. It’s my go to meal when I don’t feel like cooking {which is pretty much most of the time these days}. 1 can of chicken with all the extras will fill me up for the rest of the day if I eat it for lunch.
The Girl did a Costco run for us! Have you tried the crème brulee? It’s lovely.

I’m so glad we don’t live around the corner from a Costco anymore. When we lived it Washington it was less than 5 minutes from our house and so I used to shop there waaaaay to much.
While the food prices are usually pretty good… it’s all the other stuff that you didn’t think you needed/wanted until you walked around that gets you.
Hedgerow Market $33
Hedgerow Market is my new favorite place. This week we picked up two Made in Maine cheeses, salmon spread and a delicious bag of cranberry almond biscotti {which I ate in 2 days}. Everything was made locally and I LOVE THAT. I love knowing that my food dollars are going directly to the people that made the product.
And well, because the fridge is well stocked with fresh fruit, vegetables and cheese… we had pickety bits. More than once last week. 🙂
Maybe I’m a little crazy, but I kind of feel like summer is for simple meals.
Ice cream {totally a meal} pie {it has fruit} cheese and crackers, fish tacos and whatever else sounds good on the spur of the moment is what we’re all about this time of the year.
Getting outside, playing in the dirt, enjoying the scenery and taking it easy.
Slow and simple. That’s my recipe for this summer.

Crackers! You have several different types that you open and use at once. Any tricks for keeping them fresh. Mine go stale in days, but I leave them in the box and tightly roll the bag inside. I only allow one or two open at a time because nobody will eat them stale, but the variety is boring when there are several other packages in the pantry that look better than the open ones. I’ve started buying the little snack pack sizes if I can find them because it helps, but those are only in certain varieties like ritz, club, and graham.

I put cracker in Mason jars and they keep really well.

I put mine in a big Tupperware container in my pantry. That way they are all together and if the packaging gets ripped too much I’ll put it in a baggie too just to keep it from going everywhere.

If your crackers are a little stale, heat them in the oven for 15-20 minutes and they will be fine!

I totally agree! Dinner this evening for hubby and I was yummy homemade tuna salad sandwiches with chips. Then a long walk with my teen daughter and our dog followed by a frozen fruit bar, nice, relaxing evening ahead.

I have had those creme brulees but wasn’t a huge fan. What I did like though is the little glass dishes they come in! Tell The Girl that they are great for watercolor painting!

I just bought the same creme brulee at Sam’s Club in Scarborough yesterday. I’d never had it before and was pleasantly surprised with how yummy it was. I love the little jars too.
