Do you ever have those weeks when it feels like you are eating the same thing over and over and OVER again? Well, that was us last week. 🙂 The HH made his delicious meatloaf recipe and well, since it’s just the two of us these days, there were leftovers.
Like three days worth of leftovers.
But it didn’t just stop with the meatloaf.
I made a tuna casserole and so we had that for three days as well. And I learned something new {from my apparent picky eater} Club crackers are not the same as Ritz crackers when it comes to using them as a crushed cracker topping. According to the HH, you should never substitute Ritz crackers for any reason whatsoever.
Geez… you would have thought I ruined the meal or something. 😉 Bahahaha or maybe he was still a little bitter from the hostel office takeover situation.
Oh, and he made my favorite copy cat Panera tomato soup again.
And of course there were pickety bits too.
And a delicious egg salad sandwich on toasted bread. We didn’t have any onions or tomatoes though so that was a bummer. Raw onions. I just love raw onions on a sandwich. Walla Walla sweets are probably my all time favorite onions though.
And then last but not least… we went on a date day and the HH took me to a weenie stand and I ordered a chili dog and Fritos. Talk about the best lunch ever. Or at least a lunch you should treat yourself to twice a year. 😉
Life. Sometimes the food is really exciting, and other times it’s like you stayed at Grandma’s house for a week and she made all your favorites.

Oh, man, I wish I could agree with the raw onions bit but I can’t. I like the flavor, but in my 20s I realized that raw onions were one of my migraine triggers. Even undercooked onions can do it so in a restaurant I have to be careful with what I order.
I made homemade spaetzle last night to go with the roast. The roast was okay, but there’s something spectacular in the simplicity of flour, eggs, salt and water plus some butter. I really should make spaetzle more often.

Homemade spaetzle is one of my specialities, been making it since 1974 outside of Stuttgart. I use a spaetzle press then layer the finished noodles with grated emmentaler, topped off with browned onions. What do you use?

Last week I made the most amazing shrimp and corn chowder using this recipe https://www.foodnetwork.com/recipes/ina-garten/seafood-chowder-recipe-1925488. I even made the homemade stock using the shrimp shells. Perfect thing for a cold and dreary day.
My husband really liked it even though he is not a big fan of soup like I am.

Meatloaf freezes well. There are only two in my home too & I love meatloaf, but not all week! I freeze individual slices.

Same here, just two old empty nesters. I freeze it in two slice portions and was so happy when I discovered it freezes beautifully! My freezer is my friend.

I have a meatloaf recipe that cooks in a muffin tin, so they’re portioned out already (although my husband eats 3-4 for dinner). Plus it doesn’t have to bake as long.

There’s just one at my home and I love meatloaf. When I make it, I form it into patties and just fry one patty when I’m in the mood for it and freeze the rest. No leftovers that way.

My favorite thing about meatloaf is meatloaf sandwiches with the leftovers. I know, it’s still meatloaf but at least it’s a little bit different. Tuna noodle casserole… yum. My hubby doesn’t like it so we rarely have it. I love it so much and have it so seldom that I wouldn’t care what kind of crackers were on the top!

I got a sale on spareribs. Huge slabs, so I bought 2. It’s just my husband and me, so we’ve had ribs twice for dinner, and we will have lunch again today. The ribs were “previously frozen”, but one was still very frozen. That one went into the freezer for later. If they were fresh I would have cut them in half before freezing. Good thing I love ribs!

We ate like you last week! (except chicken instead of meatloaf)
I bought a Costco chicken . It was huge so I weighed it…5 1/2 lb
First meal was a few slices of the chicken with baked beans and coleslaw
Next 2 nights sliced chicken with mashed potatoes and peas
Pulled the meat off the bones …stirfry with some and into the pot with the bones for some stock and homemade chicken/ vegetable soup….1/2 gallon of soup lasted for 3 lunches for 2 people

I cooked many delicious things last week, but the best thing we ate was sushi. We haven’t had it since February of last year, and I nearly wept with happiness. (Takeout in our area is pretty limited to begin with, so it’s not always easy to get things like sushi, especially with the pandemic.)

Had chili dogs twice last week here that I made. Hamburgers 2 days as well – Olive burgers one day and regular hamburgers the next.
Onions – I love sauteed. One time I had 3 large Vidalia onions which I sauteed and ate it all myself for a meal. A bit of indigestion, but was in heaven over that meal.

It’s almost New Years, so time to decorate and start making all my favorite Vietnamese recipes. Started with my mother-in-law’s cha gio (Vietnamese egg rolls) yesterday. They are the bomb and I’ve managed to figure out how to air fry them so the are super crispy and low fat too!

My husband and I are alone at home also. Living in a tiny house no less. Our kids laugh because we cook and then eat on it all week (and then possibly turn the leftovers into something else and eat it some more).
This week – I turned leftover butter/milk/flour gravy, leftover corn, peas, and baked potatoes into that cheeseburger soup recipe you shared. It was delish and I ate it until it was absolutely gone along with a pumpkin pie I made earlier in the week.
I made homemade pizza twice. Soooo good! We had popcorn, cheese and crackers, and spicy mexi dip as our “pickety” bits with drinks on Friday evening. Last night we made blackened/cajun spiced air fryer fish. (Meh.) My hubby loved it but it was a little too juicy and spicy for me. I prefer well done fish. I also made homemade mac & cheese, cornbread, and more peas to go with the fish (trying to eat from the pantry/fridge rather than going to the store). I made some delicious morning glory muffins Saturday but used mostly zucchini and only a few carrots with apple, cinnamon, and raisins in the muffins. (I had no coconut. LOL) – so basically just used the recipe as a guide. Obviously it was a good week for food because I was fat and sassy on the scale this morning. Ah well… we can do nothing, see no one, go nowhere, so excitement is coming from meals these days.

When we were briefly empty nesters before the eldest graduated and came back home I bought the Company’s Coming : Cooking for Two cookbook as well as a magazine type cook book from Taste of Home. I grew up cooking for our family of 6 then married and then had two children so I downsized my meal prep but always cooked enough usually for two meals ( a girl has to have one day off of actually cooking now and again!). When we were back to two at home I was still making dinner for 4 and like you eating the same thing for days on end. I ended up freezing half for the next week which worked but you get tired of that too! So having these cookbooks helped scale down the meals and learn new ways to cook smaller portions! Like cooking meatloaf in muffin tins which makes them super easy to freeze or pop in Hubs lunch for the next day at work! I also wanted to mention I absolutely love the colours you used in your heart pillow you featured in yesterday’s blog!

We are doing veganuary and although I’ve tried downsizing say a veggie curry or a veggie chilli we are cooking once and eating at least twice even if I downsize the recipes, we just don’t seem to eat such big portions anymore, but like above it’s good to have a couple of days off cooking and I do tend to try and space the same meals so we have three days between them or just freeze the leftovers.

Hi Mavis! I love that you make us think about the little things in life. Sometimes those bring the most joy. My best meal last week was a full turkey dinner. We were in quarantine at Thanksgiving after traveling, but I managed to get a turkey in the freezer once we were able to go to the grocery store. I cooked it up along with all the trimmings on Saturday, and it was so good. Now we are having a turkey week, and I’m loving it
