It was easy and delicious in the meal department last week. Half of our meals were gobbling up little bits of leftovers I had stashed in the freezer this summer {I used some leftover beef tips in the beans and rice bowl pictured above} and the other half of our meals were homemade soups served with scones or fresh bread.
Partly because the weather has finally started to cool down, and also because I wanted to get a few soups made and tucked away in the freezer for easy meals on the days we’ll be outside working in the yard.

While rummaging around the freezer I found 2 slices of meatloaf… so I paired it with mashed potatoes and some fresh corn from one of the little roadside stands.
Sheet pan party nachos {tomatoes and cilantro from the garden, leftover over garlic butter beef tips from the freezer}.
And pie! I made 3 pies last week. 2 apple and 1 blueberry. I baked one of them and popped the other two in the freezer to enjoy some other time. {If anyone wants to know my method for freezing pies, just let me know and I do a post about it.}
I also canned 12 {28 ounce} jars of cinnamon applesauce and a few extra for The Girl to take home with her the next time she stops by. I like to use the 28 ounce Weck jars for canning homemade sauces.
Soups we made for the freezer:
- Rustic Split Pea and Ham

- The HH’s Chicken Soup with Costco Canned Chicken
I like the Stack Man brand of deli containers for freezing soups as they are durable and reusable.

I think my goal for the next few weeks is to continue eating the little bits of extra meals I stashed in the freezer this summer so I can free up some space in there for a serious freezer meal session. I had so much fun making all those freezer meals with The Girl last week, that I want to do the same thing for us.
Also, while I didn’t do any grocery {store} shopping this week, I am giving myself until the end of September to get the rest of the things I need on my list before I forgo shopping for the rest of the year and settle into winter hibernation mode.
I have a TON of rug hooking {and a few home improvement} projects I want to get done over the next few months, and not having to shop for groceries, or think about meals, is HIGH on my priority list for this winter.

Limited freezer space here but stocking all I can. Trip to Costco in city next week. Hoping everything I want will be in stock. Just the two of us here too. Our climate is mild and my winter greens are up and growing. Once a month shopping for produce and dairy.
You are an inspiration and love your recipe ideas.
I want to do more freezer meals myself when I have room.

We went apple picking last week, so I froze 3 apple pies, 6 batches of apple cinnamon scones, 2 batches of apple muffins, 3 batches of apple pie doughnuts, and 3 batches of maple apple topping (for pancakes).
I did not make it to the grocery store last week, so I am also giving myself until the end of September to finish stocking up and freezer cooking.

We have a Walmart, Costco and Publix all on the same road into town – makes it easy to check prices and comparison shop. And we don’t waste gas running all over town to save money. Typically we spend about 700.00 – 800.00 a month for the 3 of us but that includes all cleaning products and personal hygiene products as well. And feeding a teenager isn’t cheap! When Publix has a BOGO sale on something, I will check Walmart & Costco to make sure it wouldn’t be cheaper there. I start my grocery shopping at Walmart (with my list!), then onto Costco and then I wrap it up at Publix. About 90% of the time I will find the cheaper price and I am content with that. It keeps our pantry and freezer well stocked and you just never know what the next day will bring . . .
In the past I have canned and frozen veggies from the garden – that plan didn’t work out too well this year. Hopefully we can get back at it next spring. There is nothing quite like homegrown veggies – they taste better and costs less!

Yes, please Mavis. I would love to know your process for freezing pies. Your pie pastry is my go to for pie crust! It’s never failed and is delicious!

Please do tell us how you freeze pies! I asked in a previous post but didn’t get a reply. Do you freeze the filling separately or the pie whole? Baked or not?

Do you eat any pork? (or anyone here)
My husband makes a lot of pulled pork on the Traeger, and we freeze the leftovers, but it ends up having a weird taste that I do not care for when we cook it up to use later. Wondering if there is a different way to freeze pork.
