Last week I pulled a few things out of the freezer for mealtime and so our meals were super easy. I felt like I hardly did any cooking at all.
Bagels with cream cheese and smoked salmon, my favorite copy cat Panera tomato soup, the HH’s chicken noodle soup, and some delicious King’s Hawaiian Coconut macadamia bread that I had ordered online back in September.
Have you ever tried King’s Hawaiian bread? It’s crazy good {and soft and sweet} and you can order it online and they offer free shipping with any $30 order PLUS, it freezes really well.
I think the only thing I made from scratch last week other than the rocky road brownies, was our favorite tuna casserole recipe.
The HH made a tray of sheet pan nachos {he doesn’t load his up with as much stuff as I do} with some of the leftover steak tips in the freezer and we also pulled out one of the frozen pizzas we had stashed in there one night too.
Not very exciting I know, but quick and easy and perfect for a week when most of our time was spent outside planting bulbs or indoors working on other projects.
Some weeks are full of time consuming home cooked meals from scratch, and others, well other weeks I’m just glad the pantry and freezer are stocked and I can just pull something out and heat it up without thinking about it.
It’s been a little over a month since I’ve been to the grocery store and my goal is to make it to the end of the year without going grocery shopping. So far so good.
My current egg count is 23 {although I’ve been craving a quiche so that will probably be cut in half this week} and the HH is down to a 1/2 carton of his almond milk and I am still using Nido powdered milk in my 2 cups of tea each day.
Only 61 days to go until the end of the year. Can you believe it? Is it just me or has this year just flown on by?

I got myself into a predicament over the weekend with food space. We were supposed to pass off 20 freezer meals to my dad on Sunday, so I went out and bought ingredients to make the last 3 freezer meals I wanted to make for us on Saturday since I’d suddenly have plenty of freezer space. Then the plans with my dad got cancelled. So, if anyone needs me this evening, I’ll be fitting double batches of pot roast, chipotle chicken chili, and shepherd’s pie into my extremely full freezer.

If HH runs out of almond milk, it’s easy to make it, but cashew milk is crazy easy. 3/4-1 cup raw cashews, 1 cup water, pinch of salt and a tsp of sweetener (if desired) blended until smooth and creamy. The almonds need just one extra step of soaking and popping the skins off of the raw almonds. Just thought I’d throw that out there Some people run it through a milk bag or fine mesh strainer, but since I primarily put mine in smoothies, I never do.

Almond milk can also be bought in those rectangular shelf stable quart containers that don’t need refrigeration until after they are open. Check out the ones from Pacific Foods. I buy a case of 12 of those quarts and it lasts me many months. Two cases and I’d be good for probably a full year. I know you don’t want to buy anything now but for future no-buy projects you/HH might want to try those.

Does the cashew milk need to go through a nut bag or just the almond milk?
