Last week started off with a marathon for The Girl and a trip around the North End of Boston for me. Bricco Salumeria & Pasta Shop for a spicy salami to bring home for the HH {he claims it’s the BEST salami!} and Maria’s Pastry for biscotti to dunk in my tea later in the week.
The day after the marathon I hung out in my pj’s and when dinner time rolled around and he asked what I wanted for dinner I requested a big plate of mashed potatoes. But he said I couldn’t eat just potatoes for dinner and so that’s how the Brussels sprouts ended up on my plate.
The next night I made Ritz cracker chicken. And MORE potatoes. 🙂

And then the BBQ shenanigans started up again.
Mavis: Why did you burn the pork roast!?
HH: It’s not BURNT. It has a little bark on it. That’s what they call it…. BARK.
I just rolled my eyes because I had no idea if it was true or not.
The little jumping bean didn’t seem to mind either way.
I think I could go the rest of my life without another BBQ pork roast. Sugar on the other hand… I know for sure that I could live off sugar and pastries for the rest of my life. Even when my teeth fall out someday because they can’t repair them anymore, there will still be bread puddings and fruit crisps and lemon tarts and all sorts of sugary goodness I can chop into tiny bits and swirl around my mouth and wash down with a warm cup of tea.
Sugar. Sugar trumps BBQ any day of the week.
Hey! The town Ice cream shack is open for the season! 🙂 The chocolate soft serve {my favorite} machine wasn’t up and running yet but they did have my second favorite flavor… Mint chocolate chip. I tried to get The Girl to take me for another scoop the next day but she wouldn’t do it. Driving there myself is out of the question.
Ice cream is meant to be eaten in the passenger seat.
Costco $123.45
I went to Costco with a friend for the first time this year and all I can say is this…. I am so glad I don’t have a Costco nearby because if I did, I don’t think I’d get out and shop the local cheese, or mom and pop places or even the general stores as much as we do now.
I passed by a giant pallet of maple syrup and I could think about was how I’d much rather buy our maple syrup from the guy who taps the trees. I actually felt a little guilty standing in the checkout line with cheese in our cart. With SO MANY local cheese shops near us, it felt a little weird buying it from a wholesaler knowing how many hands the product had to pass through to get it on the self.
Why don’t I feel this way about olive oil, or flour or crackers?
I thought for a second there I was turning into one of those hippy dippy people. But then I remembered the package of freeze dried mushrooms I picked up and thought… Nah… I haven’t gone off the deep end yet.
The HH’s Easter Sunday feast of BBQ pork {again!} weenies and roasted sweet potatoes.
What the heck are we supposed to do with all this BBQ pork!
And last but not least… My Easter pickety bits platter of goodness. Isn’t it beautiful? I’ll be eating the leftovers for days…. And the HH, well, I think we all know what he will be eating this week. 😉

Pork nachos! Layer chips, sweet peppers, chopped or shredded bbq pork or brisket, drizzle with ranch dressing & bbq sauce, top with shredded cheese, & broil…..

One of friends smokes meat that he has so highly spiced that I can’t eat it if he includes ANY of the bark.

You don’t feel that way about olive oil because you don’t live in California. It’s hard to buy Costco olive oil if you live where it is made (but I do it anyway). On the other hand, I can’t bring myself to buy produce at grocery stores – local farms or bust! Same with honey and wine.

My guy likes to do large pork butts/shoulders on the grill too – like, 9 lbs. It’s a lot of meat! So here are a few of the ways we use it: Brunswick stew (even if it already has the bbq sauce mixed in – if you need/want a Southern GA recipe, lmk), pulled pork sheet nachos (as Jeanie M. suggested), reuben sandwiches using the pork instead of corned beef, stir-fried into Asian stir-fry dishes, and made into chili instead of using beef. All different flavors so you don’t get totally sick of it!

My husband does the same…why not fill up the smoker? So I freeze meal sized portions for sandwiches too. Gonna try the reuben idea though, thanks! We also love stir fry so maybe we’ll give that a try as well. Thanks for these ideas!
