This past week was a busy one! There were garden chores galore, trips to various nurseries, a mini date day adventure, LOT’s of wool dyeing and just a bunch of tiny projects that seemed to pop up at every turn. Luckily though, we had a ton of leftovers from the HH’s Easter smokefest and a boatload of sliced cheese and salami in the fridge, so for the most part, last week was pretty much grab and go in the meal department.
Market Basket $31.34
We did pop in to Market Basket though for a few rations. And at the checkout line started an argument over whether or not Almond Milk should be called almond milk or not. Almond juice? Almond squeeze?
I don’t know… All I remember is that the HH had heard something on the news about how the dairy people are all upset because the manufactures of almond, cashew, walnut, oatmeal milk are calling their products milk when clearly it’s not milk and that’s when I started to roll my eyes and lose interest and just be glad that I don’t waste my time on watching the news.
24/7 news. It was a baaaaaaad idea. Especially when the same story gets repeated over and over and over.
What does one do with leftover pork? Make sheet pan nachos of course!
And my new go to recipe for leftover pork and weenies… Saturday night beans and maple cornbread.
Date day lunch. He had the haddock, and I had the crab cakes.
Then, the day after we worked too long in the garden {and I was hobbling around the next day} I requested a giant plate of mashed potatoes for dinner. And he delivered.
The HH makes his mashed potatoes with just butter, a wee bit of sour cream and salt and pepper. I add loads of cream cheese, sour cream, butter {usually a whole stick} and salt and pepper. I like my version better. But beggars can’t be choosers, especially when they don’t want to get off the couch to make their own dinner.
Beans and rice, rice and beans.
Sunday brunch… Come and get it. Fisher Scones, happy eggs and oven roasted potatoes.
It was a week of easy meals. Perfect for this time of year. 😉

Did you know that you can make your own pickled beets? Just open a can of beets, add sugar, and vinegar. Shake well. Let sit in the fridge about 24 hours. My grandmother used to make these when I was younger. It’s the only way I’ve ever eaten beets.

I forgot to say that you drain the juice from the can, and pour the beets in a pint jar. So sorry.

Thanks for posting these. My husband and I retired two years ago. I was hoping he’d take over the cooking but he hasn’t even though he’s a much better cook. We eat very similar to you guys. Lots of grab and go!

Instead of sour cream, add a dollop or two of mayonnaise while making your mashed potatoes for even more flavor. Delicious!

love your platters! it has inspired me to make them for one meal on the weekends…just plain fun and simple. meals lately have been whatever can be scrounged due to a recent death in the family…it was a bowl of cereal 2 nights ago. but today we are back in business – Mississippi pot roast is currently in the crock! finally some real food! My husband is smoker crazy as well and we have a freezer full of smoked pork. We usually just make sammiches or BBQ pork baked potatoes (pile baked taters with pork in BBQ sauce, shredded cheese, sour cream, and green onions, so good!), but your beans look awesome and the kids will go crazy for those nachos! Thanks!

Why yes, dairy farmers are a little annoyed about the “milk” available these days 😉
Partly because yes, those other milks don’t truly fall under the definition of milk (a white or yellowish liquid secreted by a mother mammal to nourish her young) but it’s also because so many consumers think that by drinking alternative milks, they are still doing their bodies similar nutritional favors and that’s not the case. Dairy offers a lot more nutrition than a highly processed seed “milk”, especially if one can obtain non-homogenized milk, tho that’s a whole other conversation 🙂

Mavis, I learn something new from you all the time! I have been shopping at Market Basket since I moved to Maine in 1990—but I have never even noticed their own brand of cornflakes. Now I see them in your grocery haul and I will have to find them and try them out. On another note, excitement is at a fever pitch as the newest Aldi’s opens in Dover, New Hampshire Thursday, May 2nd!!! Come on down (or over) sometime and also check out Harvey’s bakery. I sent you an article about Harvey’s years ago when you were (I think) in your house before the HOA disaster.
