The garden goodness, it’s starting to roll in. This week we enjoyed tomatoes, zucchini, beans, broccoli, blueberries and a bunch of herbs right from the backyard vegetable patch. But the best news is, it’s seems the bugs have packed up and gone home. Which is glorious if you ask me.
And the eggs, the chickens are laying like mad again and we are now on our second hen that has gone broody this summer, so collecting eggs lately has become a little more exciting.
Half our meals this week were pickety bits.
And the other half, well after having the opportunity to go to Costco, I’m pretty sure I don’t have to tell you the rest of the meals have been BBQ in nature.
While I munched on a churro, the HH tried Costco’s new Italian weenie with onions and peppers before we went shopping. He said it was really, really good. Have you tried it? He tried to get me to take a bite but I refused. Costco’s giant hot dogs are not my thing. So ummmm no thanks.

Well, I guess he’s good on chips for awhile.
Carrots, cucumbers, hummus and a nub of cheese. Yes please!
A ham and sweet pickle sandwich and chips. My sort of linner.
We made one of the packets of raviolis and we all thought they were pretty good.
And then the festival of meat began.
Round 1 was teriyaki beef tips, beef tips with some sort of sriracha concoction, and chicken and apple weenies {which have a little “bark” on them because apparently I was supposed to be keeping an eye on them but wandered off}. And grilled zucchini {my favorite part of the meal of course}.
Round 2 was more teriyaki beef, and grilled chicken.
And of course we have about 3 days worth of leftovers still in the fridge to get through.
Lucy is even getting leftovers in her kibble now. It’s nuts.
Basically, I told the HH that other than milk and fresh fruit/vegetables, we aren’t buying anything else this month! No meat, no chips, no snackydoos. Not only is our grocery budget is out of control this year because of his new hobby {grilling and smoking meat}, but I feel like with all the garden veggies and eggs coming from the back 40, we should be buying less food this time of year. Summer and all it’s fresh bounty, let’s embrace it.
I didn’t even bother to look in the pantry or the freezer to see what we have on hand, but I don’t care. All those snacks and meat he’s been buying this year have added up and I think it’s time for a breather.

We are having sautés Swiss chard a garden salad and long grain brown rice made in the rice cooker. I love walking out the front door to the garden to get dinner. Made a killer zucchini and chanterelle mushroom lasagne too.

I’ve never had Coscto’s Italian hot dog, but I can tell you that adding sautéed peppers and onions to brats is game changer (I do chicken sausages while my husband does regular brats). Just sauté in oil of your choice and add a little red wine vinegar and oregano after everything has softened. Super easy and so good.

I saute onions + peppers for our brats AND I make a cheese sauce to pour over them! Mmmmm! So yum!

We’re having steamed crabs tonight – – – no cooking for me!
Last week we had BLT’s, pulled chicken with pineapple (crock pot), egg salad, and pizza.
On the menu for this week are sausage with peppers and onions (after being enticed by your photo and since I have sausage in the freezer), grilled chicken wings, Sauerbraten (crock pot recipe), and ham and kale.
On the garden front, my tomatoes and peppers are really coming in and I am canning and freezing the bounty. We just finished harvesting lots of cantaloupe and the watermelons are almost ready. I am planning to plant some beans, kale, and beets this week for fall harvest.

Costco’s Italian sausage is pretty delicious if you ask me.
For the rest of it, though, the HH sounds bored. Maybe you need to come up with a project for him that doesn’t involve the smoker or the grill.

The black bean pasta is a real boon to those on a gluten-free diet. There are gluten-free pastas made with grains other than flour, but some people can’t have those due to other allergies or dietary restrictions – think, grain-free diets. Like everything else, some is better than others … but, at least you have an option.

The Costco Italian Sausage is delicious. It’s not a hotdog. I would highly recommend it!

If there is a Safeway near you , check out the meat department manager’s clearance section. Ours often has beef and pork at half regular price due to being close to use by date.
I’ve been buying fresh veg and making lots of salads. Due to rodents our veg. garden was a fail. War has been declared, bait stations and traps being set up.

Our zucchini is coming on strong right now! I canned 22 8 oz. jars of zucchini relish, 7 pints of zucchini pickles, baked 4 loaves of zucchini bread for the freezer, zucchini soup for lunch/dinner, zucchini fritters to go with the soup. My husband came in for the lunch the other day and said, “I am having a craving for zucchini!”. He got pickles, soup, bread and fried onions and zucchini. lol Good thing he is easy to feed! We have been having a good chuckle about it. I also want to dehydrate some, will do that tomorrow, and freeze some grated for bread this winter. Love this time of year!!

Suggest he start making bacon and sausage. Sooooo good (if you like bacon, that is). You’ll never go back to storebought. Best thing is you can freeze it in week-size portions and just take a pack out when you need it. Oh, and the meat is relatively cheap, (especially compared to buying bacon at $6 a pound), so it won’t break the budget.
As for snacks, he should start making crackers! They’re the bomb. He could make potato chips, too……
