Hello Monday!
I don’t know what the zucchini situation is like at your house these days but we’ve got oodles of the stuff. I’ve been meaning to make a chocolate zucchini cake so I’m hoping today’s the day, after all I have all the ingredients, and well, I love cake. Especially for breakfast!
Steak tips, zucchini and green beans.
The HH and The Girl brought home a pizza from Sal’s and by the time I made it to the kitchen there were only 2 slices left! What a bunch of little piggies.
There was a nice nip in the air Saturday when we woke up so I decided it was time to whip out the Crock Pot and make a batch of Split pea and ham soup. Less than a month to go until fall. 🙂 🙂 🙂 My favorite season.

Chicken salad. I like to put a little mayo, brown mustard, apples, dried cranberries and chopped pickles in mine. The HH prefers his plain.
Beans and rice, rice and beans.
Did I mention we are trying to eat down the pantry this month? 😉
I pity the fool who doesn’t use Crisco in their pie crust.

After the trip to Costco at the beginning of the month to stock up on BBQ meat, the goal for the remainder of August was to only buy essential items… you know, like milk and fruit. Clearly, the HH cannot be trusted to go to the store by himself. {And he forgot the Good ‘N Plenty!}
And what is it with men and cereal? My husband would rather eat 3 bowls of cereal a day than take time to make a sandwich. I think I’ve had exactly one bowl of cereal this year. ONE. Yet every time he goes to the store, it seems like he is buying cereal.

What have YOU been eating lately? Something more exciting than Kraft Mac and Cheese I hope. 😉 Fall, and soup season, it’s almost here. And I couldn’t be more happier.

Not sure if you listen to the podcast Proof from America’s Test Kitchen but they asked an interesting question a couple weeks ago: is cereal soup?

If you put a tablespoon full of sour cream in the Mac and cheese, it is wonderful and tastes like the expensive kind. My mother taught me this. We’ve been eating baked potatoes, beef tips cooked in the crock pot, and a nacho casserole I put together last night. I made it up as I went along. Didn’t have a recipe, but it was delish, even if I did cook it. Oh, and chicken fajitas. I love fast and easy and good foods to cook when it’s my turn.

I’m in the process of painting the walls in the kitchen, so our meals have been pathetic. Sandwiches and waffles and cereal and grab whatever. My kids have been snacking more than usual because the pantry has no doors on it at the moment and it is like and open invitation, so they don’t seem hungry by the time dinner rolls around. I’m hoping to be done by midweek this week as it has taken longer than expected. 2 coats of primer and 1 coat of paint so far, 1 to go and it is beginning to feel bright and fresh and not dark and drab.

I painted last summer, so I know exactly how that is. I was painting other rooms as well, so the haphazard meals persisted even after I finished the kitchen because I was so busy painting. I eventually figured out that one-dish pasta salads were my best bet since I could make them in advance and serve them cold but still have it be a full meal.

I agree, husbands cannot be trusted to stick to the list when it comes to the grocery store. They get distracted tooooo easily by junk food.
I am also looking forward to cooler weather and soup in the regular rotation. However, I try to use my crock pot often in the summer because it is so convenient when I have a lot of yard work and veggies to process from the garden, and it doesn’t heat up the house. I cook chicken breasts for recipes like chicken salad and quesadillas, make baked potatoes, and spaghetti sauce (with all those tomatoes!). I made homemade baked beans with leftover Easter ham and paired it with hot dogs last week.
Also on our menu last week was Oma’s fried chicken (grandson visiting), tuna salad, Sauerbraten (crock pot), and grilled jerk chicken. Tonight we are having Bami Goreng https://www.foodnetwork.com/recipes/valerie-bertinelli/bami-goreng-5214421. We love Asian recipes, and usually have a stir fry of some kind in the regular rotation, especially in the summer. A good way to use up some of your zucchini…… I made a stir fry the other night of yellow summer squash, carrots, and onions and served it over rice.

Growing up, my mama,would take us to the grocery store for shopping on Friday. She would tell me to pick out a box of cereal for me. She would then turn to my brother and tell him to pick out six boxes. Yes, SIX boxes because from age 5 to age 9, he rarely are anything else. Seriously, he would eat one non-cereal meal a week… Maybe. I have a,21 yo ds and he loves cereal. He goes through a box every few days. I just got 4 boxes of Cheerios and a gallon of milk for 75¢. Thanks HT and Super Double coupons!

A gallon of milk for 75cents? Yikes. I haven’t seen price of milk that low since 1973. Where ever do you shop to get prices like that?

Mr. Yoshida’s is the bomb! I marinade chicken thighs in it and put them on n the grill. Or baste salmon with it and broil. Super easy and delicious!

We live in the Netherlands and tis is what we have bin eating last week.endive and schnitzels — tomato / sweet pepper soup with onion, carrots and spices —- green beans and meatballs -, — chicken and vegetable stir fry — suppa Tuscana – a pasta with salad, further we eat the pantry, freezers and vegetable garden empty .what we eat is partly dependent on the fruit and vegetable harvest ,, we grow potatoes, onions,garlic and leeks, lettuce, endive, cabbage div soorten.summer and winter, carrots, zucchini ,, cucumbers, lots of fruits and herbs, peas, beans, snow peas and sugar snap peas, tomatoes

We just switched over to freezer meals for the fall, and I am absurdly excited about that. Last night was Cincinnati Chili, tonight is grilled chicken, and tomorrow is quesadillas. I had meetings all day today, and it is so nice having everything all prepped.

The cooking bug has left me. So it’s necessity cooking, vs pleasure cooking right now. But the family gets very hungry…. Yesterday I pulled out a pan of enchiladas from the freezer to thaw for dinner. (Using Mavis’ enchilada sauce recipe, naturally….I DO add a bit of cocoa powder to mine, though.) Tonight dh and I have a mtg at church, so we’re grabbing dinner after….. and the kids….they’ll have to manage on their own, lol! Sat we ALL managed on our own. Last week we had Italian beef + cut up veggies + hummus, Kielbasa + peas + sauerkraut, Tacos (using already prepped meat from the freezer), and Italian sausages cooked in Oliverio Peppers + sides of some sort. I don’t remember what we ate a week ago Sunday…. So the week was fend for selves, something pre-prepared and frozen, sausages of some type, and then the italian beef….which was a crockpot meal. Lol. Most of the food came from our pantry/freezer….I think we bought tortilla chips + lettuce for the tacos, and buns for the sausages.
So sat I picked leftover peppers from the neighbor’s garden, and made 3 pints of pepper sauce (a vinegar steeped in peppers to pour onto greens in the deep south). And sun I made 10 pints of a quick sweet + sour pickled peppers recipe. So my time + effort was used to make those. 😉 I still have a bazillion peppers to process….

From scratch egg roles, burger dips, quiche and loaded steak salad. Alot of salads with venison meat, as hunting season is in a week. Need last year’s eaten up.

At the end of last winter, I made a vat of Ina Garten’s chicken pot pie filling and froze it in individual portions. Her recipe is the best I’ve ever made and tastes ‘elevated’ somehow. This morning was actually cool so I pulled out a portion and a piece of puff pastry for the crust, and oh my word, it was so good. It has gotten me in the mood for fall, for sure. This dish is one of my freezer staples and with a baby lettuce, pear slices, and sautéed goat-cheese-rounds-crusted-in-panko salad, you can throw together quite a nice company dinner in no time. I love Ina!

Kim, I’m dying here in Texas! Suppose to drop to 80 here tomorrow and I’m so excited! It’s been too hot for school with those little window units – teachers and students all hot, sweaty, stinky and cranky! Come on Fall – I cant wait to be freezing at a Friday night football game!
