Hello Monday!
Meals this past week were for the most part, quick and easy ones as we continued to whittle down the food from the pantry and the freezer. Leftover chicken from last week’s BBQ made it on to our plates, as did the last bits of the fancy cheese and garden produce.
We also ate our last frozen pizza as well.
With the chickens laying 4 – 5 eggs a day this time of year, we’ve been eating a lot of fritattas lately {although I hardly ever remember to snap a picture of them. This time I remembered though}. I put a handful of frozen spinach, halved cherry tomatoes, peppers and a little Parmesan cheese in this one.
And then there was the three pounds of hamburger that was in the freezer that needed to be used up. I went ahead and thawed the meat and then served 3 can chili one night {2 cans of chili beans, 1 can of Rotel + 1 pound of ground beef}.
And boxes of Hamburger Helper the next two nights. I LOVED Hamburger Helper when I was a kid {that and Soup Starter Soups, remeber those?}. These days though, I only make Hamburger Helper about once or twice a year.

And then the HH broke down and went to Market Basket from some “much needed necessities” like 3 boxes of cereal and Cheez-It’s. I can’t imagine a scenario where a box of cereal would ever make the top of my list as a much needed necessity but what do I know. As long as I didn’t have to leave the house to buy milk for my tea, I’m good. And he bought me a box of Nilla Wafers, so you know, who am I to complain.
And last but not least curry chicken! If you’re looking for something tasty to make for dinner tonight, make this. True, your house will smell like curry for two days, but man of man is it ever good {and the leftovers the next day are even better}.

Cereal is always near the top of my grocery list 🙂 For some reason it is a comfort food to me. When I was a little girl and my dad was either working that evening or it was a Sunday night after church, cereal was a common meal. When dad was working, we’d all sit at the table with our bowls of cereal and a book to read propped up near the top of the bowl. Since I love to read(and I’m a bit of an introvert) that is a favorite memory!

Yes. I bought mine for $19.99 at Costco about 5 years ago and it is super easy to use. The brand is Aroma and it holds 6 cups of rice. 🙂

Tacos, lots and lots of tomatoes (they are ripening so fast right now!), smoked pork butt, homemade pizza, grilled chicken. Nothing too exciting.

Did you actually buy the Hamburger Helper, or was it left over from our couponing days at Albertsons when we got them for free? LOL!
My mom keeps giving us GALLONS of tomato juice that she gets in her senior box (it’s the only thing she doesn’t use from it). I had just harvested carrots, onions, garlic, tomatoes and zucchini and decided to make a knock off pasta e fagioli with those things + some leftover celery.
I used 2 gallons of tomato juice as my soup but added in some Knorr chicken cubes for flavoring and then added 3 boxes of different pastas, and a couple of different cans of beans and made this gigantaur pot which I then packaged up and delivered to my mom, my aunt & uncle, and my nephew and his family.
I was sure my kids wouldn’t like it so I saved very little for us. My kids were both annoyed with me because they lovvvved it. Welp, I have one gallon of tomato juice left – so I reckon I’m making another, smaller, batch this weekend.

I almost never buy cereal. My kids get excited when my MIL visits because I buy cereal.
I made Thai curry chicken. Apparently I keep buying coconut milk and my husband was getting annoyed that we had 5 cans. Well, that’s because I was going to make a double batch for the potluck but it was 85 degrees so I didn’t. I don’t know why he gets annoyed. Yes, he’s the guy who puts the food into the pantry, but I don’t remember the last time he decided what to cook.

Cereal doesn’t make the top of my list either! Unless we are out of oatmeal of course! We had spaghetti and meatballs, potato soup, omelets, tomato sandwiches, roasted chicken and pasta salad this week.

I get on cereal kicks sometimes, but I often do without. Sometimes, I make it from scratch instead.
My husband loves Hamburger Helper, but I never had it. So, I found some homemade versions online and keep the dry ingredients mixed and ready to go.

OMG! We had curry on Sunday! Do you do toppings, too? Our favorites are cooked bacon, sliced green olives, cheese, onion and chutney. It’s how it was served when I was growing up. So good!
