Hello Monday! It was a fantastic week for home cooked meals. 2 of the 3 dishes the HH prepared last week were perfect for leftovers and we were even able to sneak two new recipes into the mix.
Market Basket $114.90
We went grocery shopping TOGETHER last week… can you tell? π Also, I found the Good N’ Plenty’s {but still no Red Vines} and now that my husband has discovered Toasted Cheez It Crackers I have a feeling those will make their way into every shopping trip as well.
The bottle of wine was for a fancy beef stew recipe and haddock was on sale so we picked that up too. I was happy to find Ginger Gold apples and I think I’ll make a pot of applesauce later today. Homemade applesauce is the best, don’t you think?
Hannaford $9.95
Cabbage $0.49 a pound, Asparagus $1.99 a pound, Butternut squash $0.79 a pound, English cucumber $0.99 and a 5 pound bag of potatoes for $2.49. I haven’t a clue what I’m going to do with the cabbage yet, maybe fried cabbage with bacon, but if you’ve got any good ideas, I’d love to hear about them.
Getting older is a kind of a funny business. It seems like every recipe we make these days lasts two or three days. This beef stew for example. It called for 3 pounds of chuck roast, and we ate the stew for dinner one night, and lunch the next two days.
Not having super hungry teens around anymore is probably the reason why food lasts a bit longer around here, but it’s still kind of weird getting used to the idea that maybe we should start cutting all the recipes we make in half if we don’t want to end up with a fridge full of leftovers. Maybe it’s all in my head, I don’t know.

It was a good week, I even baked a batch of the best chocolate chip cookies on earth, made a mini salami and cheese platter and made a list of meals to cook for this week. Even though there is still a long list of projects to plow through, it seems like things are finally starting to settle down and we are getting back into the swing of things. π

Use the cabbage for unstuffed cabbage soup! Easy to make, freezes well and is just the thing for an easy, warming meal on chilly Autumn evenings. If you make stuffed cabbage rolls, same concept except chop the cabbage. I make mine in a slow cooker and add beef stock (homemade of course!) or a bit of beef soup base for added flavor.

I just picked my last two cabbages from the garden. I love it fried with carrots. I used that veggie mix and put spaghetti sauce over it instead of the pasta my children are, a low carb option. I eat cabbage all winter really. My husbands family are polish so I have learn that it goes in many recipes. Beef and cabbage stuffed pastries are yummy.

My stepdad used to make a fried cabbage pie, usingizza dough. One of the best uses of chopped cabbage.

I add the toasted cheez its to the top of baked mac and cheese. Good luck with the cabbage…maybe with corned beef or an eggroll bowl.

Unfortunately I don’t have it set up yet and don’t think I will until after the holidays. I did make a few extra ornaments for this year but still need to photograph them and get them listed. π

I like to make up a bowl of KFC Coleslaw and eat it all week. We also like the fried cabbage but just do it in bacon grease. Bits and ends can go into stir fry.
We are in the same boat as you as empty nesters and too much food. On the beef stew recipe I would have cut the meat down to one pound which just makes it less food and we don’t miss the meat, I cut every recipe that I can in half if the ingredients work that way. I also find that we just eat less so a four serving recipe often is 6 servings for us. Things that freeze well like my meat sauce gets frozen in two serving containers. It takes some trial and error to know how much but for us I do 1 1/2 cups sauce and serve it over 6 ounces of pasta total. I can eat something twice in a week but after that I do not want to eat it again.

This weekend I made your easy bean soup that you mentioned last week. My HH is not big on soups but he loved this recipe. I have never used Rotel but it really added a kick to the soup; so good and easy. It seemed soupy enough with 2 1/2 cups water so I did not add 6 cups as called for. This recipe is definitely a keeper.

Egg roll in a bowl is my favorite dish to make with cabbage. There are a ton of recipes online and I never seem to make it the same way twice. My husband isnβt a fan of veggies so I cook a batch of it and take it to work for lunch for the week.

Love, love, love Toasty Cheez-its!! I love to cook some piece of pork until it’s done, then slice a head of cabbage up and cook until soft. It takes on the meat flavor and dinner is done. Dh and I are recent empty nesters, but we love the idea of cooking once and eating twice. Isn’t Stouffers classic lasagna the best go-to meal? It’s one of my favorite “I don’t feel like cooking” meals.

I definitely recommend learning to cook for one or two. We’ve been in the empty nest for 7 yrs now & we enjoy cooking & eating so much more without facing all of those leftovers. At the very least, when you cook a regular size meal, divide it in half & freeze half of it for another day.

JJ’s Five Dollar Curtido……to serve with beans! I just made a big batch that lasts us a very long time. We love it! My cabbage must have been huge because I have over half of it left. I’ll be making stuffed cabbage soup. I might even have enough to make egg roll in a bowl thanks to several suggestions!

Iβm in the stage of life where I go and spend $200 at Costco and $200 at the grocery store and a few days later my fridge and shelves are empty again. My kids eat so much food right now and everybody says it will just increase. Iβm seriously contemplating hiding food just so I donβt have to go to the grocery store again, that way I can just pull it out and restock and pretend I shopped again. My kids polished off a 5lb bag of cutie oranges in and afternoon! It doesnβt mater what food it is, it just goes into their bellies.
As far as cabbage, I add it in goulash after sautΓ© or I make a apple/cabbage slaw. Egg rolls are easy too or even a fish taco with a cabbage slaw and lime crema.

I remember those days, 14 gallons of milk and 14 loaves of bread at a time. Fruit by the bushel and case and used to make lots of muffins for snacks .Now a days its husband and me plus one teen and we eat leftovers a lot we also have an adult son living at home agian and it helps some but he eats two meals a day at work. In fact this week we are cleaning out all the little bits from the freezer.

A neighbor shared with me a Cabbage Lasagna, very tasty. Just substitute the pasta with cabbage leaves. If the spines are really big, just split the leaf down the middle and cut most of the thickness out. Freezes very well.

Ah we are on the opposite side. We are 49 and 51, with one 13 yo boy and a 7 yo boy. The teen is starting to eat me out of house and home, and he gets free lunch at school! Occasionally my husband travels, and those weeks I have too many leftovers for sure. Your daughter is a runner, so she prob still eats a good amount. But not like a teenage boy.

When you are cooking something such as the stew cook it as normal and before you had the potatoes divide it into 2 or 3 containers, cool, label and freeze them. Add the potatoes to the stew on the stove and complete cooking. An easy way to put some meals in the freezer without having to do extra cooking.

I’m sure this recipe takes knocks out any nutrition you might get from the cabbage, but it sure is good. Slice your cabbage into large pieces. Place smoked sausage on top. Then add one stick of butter. Salt and pepper liberally. Cook with just a little water until the sausage is warm and the cabbage is cooked, but still somewhat firm. My mom used to make this all the time and it is a comfort food for me.

My new favorite dish is cabbage cakes. Scramble 2 eggs and salt and pepper and garlic powder to taste. Put 2 heaping handfuls of shredded cabbage in bowl with egg mixture. Coat well and drop spoonfuls in hot skillet with melted butter. Smoosh down and cook a minute or two until brown edges. Flip and do same. They remind me of egg foo yung. Made it 3 nights in a row.

These are all such awesome cabbage ideas! I love cabbage, but we get so sick of it by the end of the winter, so I’m stoked to have more ideas.
This fall was just too busy for a fall garden, so I joined a CSA to try it out for a season. I chose an option that included eggs since our 7-month-old hens still have not laid any yet.

We like to sautΓ© onions then add cabbage (sliced thin) to the pan. Add a little water and cook till crunchy. We then add ramen noodles and the flavor package. I do soften the noodles a little before adding to pan. We usually will eat this with kielbasa. Yummy and so easy?
