The one thing that is starting to annoy me about shopping exclusively at Costco is the portion sizes. For instance, even though Monkey Boy’s beloved Doritos were on sale for $3.99 this week, if I was going to treat him to a bag from the grocery store I would have waited until they were on sale for $2 a bag. Sure the LOVES the fact that he is getting more… but I miss being able to spend that other $2 on something else. First world problems, I know.
I do love those Costco croissants though. Especially when they are stuffed with eggs, cheese and ham. Yummarooo! Talk about the perfect breakfast to fill your belly.
Last fall Zaycon was offering 6 packs of seasoned turkey breasts and let me tell you Bob they were delicious! Sadly I used up the last one I had this past week. 🙁 Must.Get.More.
I whipped up an easy peasy turkey casserole with the leftovers.
I made a peach crisp using some canned peaches I had in the pantry. Earlier in the week I also cooked a sweet and sour freezer meatballs freezer meal and it served it over rice. It took us 2 days to finish. And I served pasta one night as well.
Check it out! My first homegrown salad of the season. I added a little balsamic vinegar and shredded cheese and it was perfect. If you’ve never grown lettuce indoors before you should really try it during the winter months. It will make you heart happy. 🙂
When I was at Costco last week I wanted so badly to buy one of their giant cheesecakes for $12.99. I’ve had them before at sports banquets and the Costco plain cheesecake is delish. But I didn’t want to blow 1/3 of my budget on it so I found a basic recipe and slightly modified it to what I had on hand and made one. The recipe called for a fresh fruit topping but I thawed some blueberries I’ve had in the freezer since last summer and the cheesecake was WONDERFUL. {I’ll post the recipe soon}.
And last but not least, the HH’s Sunday breakfast tray. I serve him breakfast in bed every Sunday. Did you know that?

Mavis…I love that you are sweet on your honey for a breakfast in bed! My hubby is usually up before me, but our 5 year old got to experience Breakfast in Bed at a hotel stay about two years ago and was marveled by the “event”! So, from then on we eat breakfast in bed together at least once a week…even on a school morning. It changes the entire tempo of the day and we love it! Something about trying to balance your food on a fluffy bed while keeping the crumbs at bay make us very happy! Enjoy the rest of your Monday!

I love those croissants, too! My question — do you use them all up or freeze them? The portions are so large at Costco, that I feel like I burn my family out on some items — like croissants since I feel the pressure to use them up before they go bad.

I freeze my croissants when I buy them in the big pack. I just use a small zip lock bag (like sandwich size if the croissant isn’t super sized), push as much air out as I can and toss them into the freezer. Packing them as singles avoids any chance of them freezing into a big mush ball. Plus it lets me control portions by only taking out exactly how many I’ll be using. I let them sit in the fridge overnight and by morning – they’re ready to use.

We love the Costco croissants! The attached brunch recipe is an awesome way to use them. Typically, I double the recipe to a 9×13 pan with slight modifications: 2 C frozen wild blueberries (from Costco), 2 C milk, zest of 1 lemon, & bake approx 1 hour. It’s super easy to get everything ready the night before and throw it together in the morning. Rave reviews every time.

I grow lettuce indoors too! It’s perfect in winter when I’m craving something FRESH. I only have one windowsill dedicated to it, but I get a enough for adding to recipes (I put arugula and parsley into my lasagna today), filling sandwiches, adding to tacos, mixing into colcannon or the occasional salad. Not bad for one windowsill!

Hi Mavis, I love your blog and all of your recipes, your family eats whole foods without all the processed junk. Growing all of your produce is awesome. Love that you can feed your family on 100.00 a month… Have a question, you have mentioned many times that you have picked up meat from Zaycon using credits, Lucky you, and what a blessing for you. I also order from Zaycon. For someone who can’t earn enough credits, what would you add to your 100.00 a month for a family of three if you had to buy meat regularly. Even buying for freezer meals ? just curious what resources you would use ?
