Much to my surprise, I ended up with a large amount of free mushrooms this weekend. Thinking ahead to winter, I decided to go ahead and dehydrate them to use in soups later on.
If you have never dehydrated mushrooms before, let me tell you. It was a piece of cake. Seriously, a trained monkey could do it.
All you need to do is rinse off the mushrooms, pat them dry, and slice about 1/4″ thick.
Then pull out your dehydrator, place the sliced mushrooms on trays, and turn the food dehydrator on to 125 degrees. Come back 6 hours later, remove the dehydrator lid and let the mushrooms cool down for about 15- 20 minutes.
Pack in canning jars and store in a dark pantry until you are ready to use them.
Now how easy was that? See, I told you a trained monkey could do it.

Whirl up in a food processor and add resulting powder to spice mixes, spaghetti sauces, or white sauces (mushroom soup, anyone?). I’m actually making up some packs of mushroom soup mix for my mom (who doesn’t really know how to cook without a can of soup, it seems) for Mother’s Day. I guess she’s all about low sodium right now and that’s my cue!!

I am in the middle of changing my entire diet due to confirmed food allergies. It is overwhelming! I can no longer use store bought condensed cream of mushroom soup for my baking needs. Do you have a homemade recipe to share? I would love it!
