Why oh why did it take me so long to make my own peanut butter? I really can’t believe I’ve never made it before, and after seeing how ridiculously simple it is, it’s just silly that I’ve been paying for it for years. 2 ingredients. 2 steps. A 2-year-old could do it {okay, so I might not trust a 2-year-old to run a food processor, but you get my drift}.
1 pound roasted unsalted peanuts
1/4 teaspoon salt
Place the peanuts and salt in a food processor {I actually use a Blendtec}. Turn on and let it whirl until smooth and creamy, stopping to scrape the sides of the bowl down a few times. Store in the fridge in an air-tight container {I used a Mason jar}. I always take it out of the fridge a very minutes before I have to spread it on anything so it softens up a bit, because it will be hard to spread when it’s straight from the fridge!

Ours in never in there for longer than 2 weeks. In that time it doesn’t separate Only almond butter will get a little sheen of oil on top. Not much though. I have never had any other nut butter separate. I keep them in the fridge as they are runnier than nut butter from the store that have palm oil added..

If you want a creamier peanut butter get the twister jar thats made for the Blendtec. I make it weekly for hubby. I fill the jar 2 thirds full and run it through 2 or 3 cycles. My fav is cashew butter. OMG Both are much creamier with the Twister jar.

How long does it keep for in the fridge? Not that it would last long at our house!

The longest its lasted in my house is 2 weeks. Though I am sure it would last longer.

I use my really cheap food processor from Walmart. I just use unsalted peanuts and that’s it. I run it for about eight minutes and it lasts in the fridge for up to month. I’ve never had it separate or lose flavor or go bad at all. If you have a Winco near you the peanuts in bulk are usually $1.50 or less a pound. The kids like it better than store bought. YUM!

When i make peanut or any kind of nut butter, i put a few tablespoons of peanut oil to make it easier to smear. That makes it much creamier and smoother. Without the oil, it tends to stay chunky or gloppy. I like to mix a couple of different types of roasted only nuts together. It gives more flavor with the nuts are lightly roasted and the taste of the different nuts combined together is delish. In fact, its a great topping for noodles, similar to sesame or peanut Chinese noodles.

One trick with peanut butter strait from the fridge is to mix it with a little of something else (apple butter works well) and it will spread 10 times easier. I find I only need about aquaplaned quarter of an ounce to loosen it and it spreads easily
